This easy banana chocolate chip snack cake is fluffy, moist and full of chocolate chips! It’s whole wheat and naturally sweetened and makes a great sweet treat any time of day!

This is a great snack cake for those really ripe bananas in your house. This snack cake is great for lunches, travelling, picnics, or anytime snack.

Chocolate Banana Bread
The most delicious chocolate banana bread ( or cake ) ever. In Canada we call it banana “ bread “ simply because it’s baked in a loaf pan but it’s definitely cake to me ???? I tried to lighten the ingredients up and use healthier alternatives but feel free to make any substitutions necessary. It is so moist and another one bowl wonder. You will need:

3 ripe bananas
3/4 cup coconut sugar
1 large egg
1 teaspoon pure vanilla extract
1/3 cup avocado oil ( or any )
1/4 cup nut milk ( or any )
1/4 cup unsweetened cocoa/cacao
1.5 cups all-purpose flour
1 teaspoon baking soda
handful choc-chips

Please note : I used plant-based chocolate chips, as well as plant-based milk. Feel free to use any you love. Walnuts are so good in here as well but it’s up to you

Directions

Pre-heat oven to 375F. In a big bowl mash the bananas , and add in your wet ingredients + sugar. Stir and add in the cacao , flour , and baking soda. Pour it out onto a loaf pan lined with parchment paper to ensure your bread does not stick. Shake the loaf pan a little bit to distribute your batter and bake for 40 to 45 minutes depending on your oven. A toothpick should come out clean. You can let it cool and enjoy. We like to wrap it nicely after it’s cooled and leave it on the counter as it doesn’t last us long. Enjoy, and follow me for more.

Banana Chocolate Snack Cake
I know this says snack cake, but don’t let the name fool you. Topped with a luscious chocolate ganache and banana slices, this snack is fit for dessert. A very short prep, using ingredients you probably have on hand, you too, can have a delicious snack cake in about 35 minutes.

Banana Chocolate Snack Cake
¼ cup, 56g, butter, softened
¾ cup, 162g, white granulated sugar
1 large egg, 50g ⅓ cup, 76g, bananas, mashed
½ teaspoon vanilla
½ teaspoon baking soda
¾ teaspoon baking powder
¼ teaspoon kosher salt
1 cup, 120g, all-purpose flour
⅓ cup, 79ml, buttermilk
⅓ cup, 72g, mini chocolate chips
Cream the butter and sugar together in a medium bowl. Add the egg and cream until light and fluffy. Add the bananas and vanilla and mix to combine. Add the baking soda, powder and salt and mix to combine. Add ½ the flour mixing until just combined, do not overmix. Add the buttermilk and mix to combine. Add the remaining flour and mix until just combined. Stir in the chips and smooth into a prepared cake pan. Bake for 25-30 minutes or until the top is golden and the cake just springs back when touched. Do not overbake.
Depan to a cake plate and allow the cake to cool for about 30 minutes. Sliced and serve warm topped with chocolate ganache and banana slices.
Chocolate Ganache
¼ cup, 56g, 60% cocoa, bittersweet or double chocolate chips
4-5 tablespoons, 59-74ml, heavy cream (36% butterfat)
Melt chocolate and cream in the top of a double boiler until smooth. Serve immediately over the cake.
