How To make Chocolate Almond Cheesecake

chocolate wafers, finely crushed

light cream cheese

1% low-fat cottage cheese

plus 2 tbs unsweetened cocoa

flour, all-purpose

vanilla extract

teaspoon

almond flavoring

egg

tablespoon
semisweet chocolate mini-morsels
1
chocolate leaves (optional)
Directions:
Sprinkle chocolate wafer crumbs in the bottom of a 7 inch springform pan. Set pan aside. Position knife blade in food processor bowl; add cream cheese and next 7 ingredients, processing until smooth. Add egg and process just until blended. Fold in chocolate morsels. Slowly pour mixture over crumbs in pan. Bake at 300 degrees F. for 65 to 70 minutes or until cheese cake is set. Let cool in pan on wire rack. Cover and chill at least 8 hours. Remove sides of pan, transfer cheese cake to a serving platter. Garnish with chocolate leaves, if desired.
chocolate LEAVES: Melt chocolate in double boiler or microwave. Using a non-poisonous leaf, brush on melted chocolate; place in freezer for 2-3 hours. Once hardened, peal leaf from the chocolate to garnish.

My creamy, fluffy, easy cheesecake recipe is perfectly sweet with a light and delicate texture, all wrapped in a crunchy Graham cracker and toasted pecan crust. Getting the perfect no crack bake is easier than you think and the end result is so beautiful it almost doesn’t need any topping!

VANILLA CHEESECAKE | WITH GLUTEN FREE CHOCOLATE ALMOND CRUST
This is a Large cheesecake recipe....enough for a grand get-together. However, if you are not up for days and days of cheesecake...you can cut this recipe in half, it works well...and freezes perfectly.
For those of you who are gluten sensitive, this cheesecake has a very friendly crust. Made with almond flour, cacao powder, and powdered sugar...it holds up! Jump in and give this cheesecake a try. You won't want to miss out on 'spoil yourself' day. I'd love to hear from you!
Recipe-Preheat oven to 325
Chocolate Almond Crust
Shopping List:
2 Cups Blanched, fine almond flour
2.5 Tbsp cocoa powder (or cacao powder)
3/4 stick butter (6 Tbsp)
1 tsp vanilla
3 Tbs powdered (fine) sugar
Cream Cheese Filling
4-8oz packages of Cream Cheese
1-8oz carton of whipping cream
1.5 cups powdered sugar
1 Tbsp vanilla
Chocolate Shavings
1 large plain chocolate bar of your choice, no nuts
Instructions:
Starting with the crust-
Add 2 cups almond flour to mixing bowl, 4 Tbsp powdered sugar, 2.5 Tbsp cacao powder (or standard cocoa powder). Sift dry ingredients together. (I found this leaves less pockets in crust after baking)
Add 3/4 stick (or 1/3 cup) melted butter and 1 tsp vanilla. Blend together until thoroughly mixed.
Preheat Oven to 325 degrees.
Spray 8.5'' springform pan with non-stick spray, sides and bottoms. Make sure to spray the sides. It will help the cheese cake release more easily.
Pour crust mixture into springform pan. Shake pan to distribute evenly. Press down with fingers or bottom of glass.
Bake 18 minutes or until set. Remove and cool completely.
Cheesecake filling-
Make sure cream cheese is softened before using.
Put 4-8oz packages of cream cheese into mixing bowl, whip with electric/stand mixer until fluffy.
Add 1.5 cups of sifted powdered sugar, don't skip sifting the powdered sugar. It will help prevent air pockets.
Add 1 Tbsp vanilla, mix until blended.
Prepare the whipped cream:
Pour 1 cup of chilled whipping cream into mixing bowl/stand mixer. Beat until stiff peaks form.
Gently fold whipped cream into cream cheese mixture. Take your time and blend slowly.
Pour mixture into cooled, chocolate almond crust. Smooth top layer with off-set palette knife or frosting knife.
Chocolate Shavings-
Chill 1 large, plain chocolate bar, no nuts
Lay bar against cutting board. Using a large knife with a long, flat blade, start at the far end of the bar and pull the knife across the chocolate...all the way down the bar. Repeat process until desired shavings are made.
*Tip-keep knife at a 90 degree angle for largest shavings
Sprinkle shavings evenly over top of cheesecake
Refrigerate cheesecake overnight before serving. Minimum, 8 hours (or your cheesecake may be hard to slice).
When slicing, warm cutting knife in hot water and run it all along the pan edge until loose. Slowly unlatch pan and work up and around to remove.
Remove plate under cake using the same method...slide off onto serving platter
