A for- Almond Biscotti ????????♂️ Simple and super delicious, these yummy tea time treats are the perfect symphony of flavours and textures ????
Ingredients-
✨1/2 cup sugar
✨1/4 cup butter, melted
✨1/2 cup milk, warm
✨2 cups whole wheat flour
✨1 + 1/2 tsp baking powder
✨1/2 cup almonds
✨1tsp vanilla extract (optional)
Method
1. Preheat the oven to 180 degrees Celsius.
2. Add melted butter and sugar in a bowl and whisk until pale and fluffy.
3. Add warm milk, flour and baking powder to the same bowl and combine everything to form a soft dough.
4. Add whole almonds and incorporate them into the dough.
5. Divide the dough into two equal portions and shape them into 2 loaves.
6. Bake for 25-30 mins until the top and edges are lightly browned.
7. Once baked, let them cool and come at room temperature. Cling wrap the freeze the loaves for about 2 hours.
8. Then, using a sharp knife, cut 1/2 inch width biscottis and lay them on a tray lined with silicon mat or parchment paper.
9. Bake at 180 degrees Celsius for another 15-20 mins, flipping half way until crisp and golden brown colour.

3 ounces semisweet chocolate,
plus1 ounce unsweetened chocolate
2 tablespoons dark rum or 2 tablespoons strong coffee
1/2 cup unsalted butter, at room temperature
1/2 cup granulated sugar
3 egg yolks
3 egg whites
1/4 teaspoon cream of tartar
1 pinch salt
2 tablespoons granulated sugar
1/3 cup blanched almond (pulverized in blender or food processor with 2 tablespoons granulated sugar)
1/4 teaspoon almond extract
1/2 cup cake flour

It is made with almond flour which makes it much lighter, but the chocolate flavors are rich and decadent still. Also you'll see my easy chocolate ganache recipe that is ready in minutes!

For the Cake batter:
1 cup almond flour (140 grams)
3/4 cup unsalted butter (170 grams)
1/2 cup heavy cream (120 mL)
1 lb. semi-sweet chocolate (455 grams)
6 large eggs, separated
1/2 tsp. almond extract
1/2 cup granulated sugar (100 grams)
For the chocolate ganache:
1/2 cup heavy cream (120 mL)
3/4 cup semi-sweet chocolate (170 grams)
1 tbsp. unsalted butter

Torta Caprese - Flourless Chocolate Almond Cake
Torta Caprese is a traditional cake of the beautiful island of Capri from Italy. It is a dense, moist flourless chocolate cake enriched with ground almonds that bring a great flavor and texture. Also as no flour is used makes this dessert a perfect choice for those in search of gluten-free dessers.

Ingredients
Makes about 8 servings
7 oz (200g) peeled almonds
7 oz (200g) semisweet chocolate
2/3 cup (150g) butter
3/4 cup (150g) sugar, divided
4 eggs
1/4 tsp (1g) salt
1. Grease and line with parchment paper a 8 or 9 inch (20-23 cm) springform pan (with a removable base). Preheat oven to 180°C (350°F).
2. Place the peeled almonds into a food processor and process until finely ground but with still some remaining chunky pieces for a crunch texture
3. Melt chocolate and butter over a bain-marie until smooth. Let it cool slightly.
4. Meanwhile separate egg yolks from whites.
5. Mix yolks with ½ cup (100g) sugar and salt until thick and pale yellow colored.
6. Mix in cooled chocolate and add ground almonds.
7. Whip egg whites until foamy using a mixer. Gradually add ¼ cup (50g) sugar and whip until stiff peaks form. Gently fold the whipped whites into chocolate mixture.
8. Pour batter into prepared pan and bake for 30-40 minutes until a toothpick inserted into the center comes out with few crumbs attached
9. Let it cool completely in the pan over a cooling rack.
10. When cooled invert onto a serving platter and dust with powdered sugar.
11. Serve if desired with whipped cream and fresh berries.
