This is one of my favorite keto pies - it's a chocolate cream pie and it's sugar free - low carb - keto! The keto crust is almost like a graham cracker crust made with a cacao powder blend from Cacao Bliss. The chocolate filling is creamy and velvety. The keto pie is finished with a whipped topping and topped with sugar-free chocolate shavings. It's a pie that will please ALL chocolate palates!

KETO CHOCOLATE CREAM PIE
Crust
1 ¼ cup almond flour
3 tablespoons coconut flour
¼ cup Cacao Bliss or 2 tablespoons cocoa powder
½ teaspoon baking powder
½ teaspoon xanthan gum
¼ teaspoon salt
3 tablespoons butter, chilled
1 teaspoon vanilla
Chocolate Filling
1 cup powdered erythritol
4 eggs
7 oz sugar free chocolate, melted
2 teaspoons vanilla
10 tablespoons unsalted butter, softened
1 ½ cup heavy whipping cream
Topping
1 cup heavy whipping cream
2 tablespoons powdered erythritol sweetener
1 teaspoon vanilla
1️⃣ 01:04 - Add all ingredients for the crust to a food processor and pulse until coarse crumbles form.
2️⃣ 02:34 - Press into a greased pie plate and bake at 350 degrees for 9-10 minutes or until crust starts to turn golden brown. Remove from oven and let cool completely.
3️⃣ 02:58 - To make the chocolate filling, whisk together powdered sweetener and eggs in a saucepan over low medium heat, stirring constantly. Heat until the egg mixture reaches 150-160 degrees or until it coats the back of a spoon. Don’t over cook or your eggs will curdle. Remove from the heat and stir in melted chocolate and vanilla. Set aside.
4️⃣ 04:32 - In a large bowl, cream butter with an electric mixer until fluffy (about 2-3 minutes). Add the cooled chocolate mixture and mix until light and fluffy.
5️⃣ 04:57 - In a separate medium bowl, beat the heavy cream until stiff peaks form. Carefully fold whipped cream into the chocolate mixture until combined.
6️⃣ 05:31 - Pour chocolate mixture over pie crust and refrigerate for at least 6 hours.
7️⃣ 05:55 - To make the topping, whip heavy cream, sweetener and vanilla on high using an electric mixer until stiff peaks form. Scoop on top of chocolate layer and spread evenly. Top with grated sugar free chocolate.

How to Make Chocolate Icebox Pie
This Chocolate Icebox Pie is incredible any time of the year but it's especially nice in the hot summer months.

You can make it without ever turning on your oven! A rich and creamy whipped chocolate filling served in a crisp chocolatey Oreo Crust

Ingredients
1 Oreo Crust prepare in a 9 1/2 pie pan (place in refrigerator after assembling -- do not bake) Crust Recipe:
16 oz cream cheese softened 450g
8 oz dark or semisweet chocolate¹ chopped into small pieces
1 ½ cups heavy cream divided (355ml)
¾ tsp of instant coffee optional
1 cup powdered sugar divided 150g
1/3 cup sour cream 75g
1 teaspoon vanilla extract
Additional homemade whipped cream for topping, if desired. You would only need 1/4 or 1/2 of a batch.
Instructions

00:40 Combine chopped chocolate or chocolate chips and ½ cup (118ml) of heavy cream in a large microwave-safe bowl. Transfer to the microwave and heat in 20-25 second increments, stirring well in between, until chocolate is completely melted and mixture is smooth.²
01:24 Once chocolate is melted, stir in instant coffee, if using. Set aside and allow chocolate mixture to cool for at least 25 minutes or until no longer warm to the touch.
01:50 Meanwhile, prepare your whipped cream. Combine remaining 1 cup (236ml) heavy cream and ¼ cup (38g) powdered sugar in a clean, medium-sized bowl and use an electric mixer to beat to stiff peaks (until mixture is thick and fluffy and resembles Cool Whip). Set aside.
02:24 Place your cream cheese in a large bowl and pour cooled ganache over top. Use electric mixer to stir together until well combined and smooth and creamy.
03:04 Add remaining ¾ cup powdered sugar (112g), sour cream, and vanilla extract and stir until completely combined.
03:30 Add whipped cream that you prepared in step 3 to the bowl and use a spatula to fold in by hand until all ingredients are well incorporated.
03:41 Spread filling into chilled Oreo crust, using a spatula to smooth the top.
03:50 Transfer pie to refrigerator and allow to chill for 6 hours or overnight.
03:58 Slice, serve, and enjoy! If desired top with additional whipped cream.
Notes
¹You can use chopped chocolate bars or chocolate chips, either will work fine. ²Always heat the chocolate in small bursts and stir well in between. If you heat it for too long or skip the stirring you might end up seizing your chocolate, rendering it unusable.

???? INGREDIENTS ????
1 box 5.85-oz instant chocolate pudding
1 pre-made 9-inch graham cracker pie crust
1 8 oz tub whipped cream
1 regular sized Hershey's Chocolate Bar
as called for on box 2% milk
???? INSTRUCTIONS ????
1.) PREPARE YOUR INSTANT CHOCOLATE PUDDING PER PACKAGE DIRECTIONS (DIFFERENT BRANDS REQUIRE DIFFERENT AMOUNTS OF MILK)
2.) Pour a little less than half of your chocolate pudding into the bottom of your graham cracker pie crust.
3.) Mix the remaining pudding with 1/2 of the whipped cream and stir well.
4.) Add as the next layer of pie.
5.) Add 1/2 of the remaining whipped cream to the top of the pie.
6.) Using a potato peeler shave off chocolate pieces to add to the top of your pie.
7.) Refrigerate for 1 hour (or more) Serve and enjoy!
