Fried rice is such staple dish in Chinese culture. It can be made with many different ingredients: chicken, pork, beef, and seafood. Today we are making shrimp fried rice. It's the perfect combination of taste and nutrition. It is flavorful but not too strong to cover the nature seafood taste. Everything combines together, it is so magnificent. Ingredient list (serves 2)
- 6 ounces of peeled shrimp
- 6 ounces of vegetable -mix (I used carrot, green peas, onion)
- Few cloves of minced garlic
- 2.5 cups of cooked rice
- 1 egg
- oil to stir-fry
Ingredients for the seasoning
- 1 tbsp of soy sauce [Pearl River Bridge Natural Brewed Light Soy Sauce:
- 1/2 tbsp of oyster sauce [Lee Kum Kee Panda Brand oyster sauce:
- 1 tsp of dark soy sauce [Pearl River Bridge Superior Dark Soy Sauce:
- 1 tsp of sugar (optional, depends on your taste)
- 1/4 tsp of salt or to taste
- 1/4 tsp of black pepper
- Juice from 1/4 of a small lime (Add at the end)
- Combine 1 tbsp of soy sauce, 1/2 tbsp of oyster sauce and some dark soy sauce together. These 3 ingredients can be the base of most Chinese fried rice. They make great flavors.
- You want to use a big wok to make fried rice because there should be enough room to stir fry. If you don’t have a wok, you can use a large sauté pan or fry everything in batches.
- Add 1 tbsp of oil to the wok. Give it a toss and wait until the wok gets hot. Then add some vegetables (carrot, green peas, diced onion, few cloves of minced garlic). Stir them until you think it is ready. It will likely take about 4 or 5 minutes on medium-high heat. I usually just try a piece of carrot and see if it is ok because it takes longer to cook then other vegetables. Then you push everything to the side
- Add in a beaten egg. Wait until it is formed. Use your spatula to break it into small pieces. Mix the veggies and the egg together. Then push everything to the side as well so we have room for the shrimp.
- Add a little more oil to the wok because the egg normally will absorb all the oil. Before the heat was medium-high, now you want to turn the heat to maximum. Fry each side of the shrimp for less than a minute. It should just turn to pink. You don’t want to cook the shrimp through because we will take it out and mix it with the rice later. Mix everything together. Add some salt to taste because if you add the salt later, the rice tends to absorb most of the sodium and the vegetable will taste a bit plain. Take it out and set it aside.
- In the same wok, add about 1.5 tbsp of oil. The key to perfect fried rice is the rice. Day old rice will be good for this recipe. As you can see, every piece of grain is individual. It is so fluffy. By the way, I always cook the rice and other ingredients separately because we like to stir the rice for quite a long time to let the rice gets enough wok heat and will be fluffier. Normally I will stir the rice for about 6 minutes, but it depends on the heat. So when you see the rice is jumping and dancing in the wok. Also, you should be able to smell the rice fragrance that means it is the time to add the shrimp and the vegetable back to the wok. Add the seasoning as well. Keep mixing until all the rice changes the color. Give it a try to adjust the flavor. You might need some sugar or salt. It is up to your taste. Add some diced scallion, some black pepper to taste. Mix everything together. I like to squeeze some line juice in it. It will bring some freshness to the fried rice and it goes perfectly with the shrimp. Toss everything together and you are done.

INGREDIENTS
4 cups cooked long grain rice
1 lb medium shrimp
1/4 tsp to 1/2 tsp salt
1/4 tsp white pepper
2 cloves minced garlic
1/4 to 1/2 tsp minced ginger
1/4 cup chopped green onion
1/4 cup (2 oz) chicken broth
2 1/2 tbsp dark soy sauce (or to your taste)
2 tsp sesame oil
3 tbsp cooking oil (add to frying pan)
4 oz to 5 oz bean sprouts
1 cup chopped green onion
**skip freezing rice if using day old**

How to Make Chinese Homemade Shrimp Fried Rice
Recipe Ingredients :
Shrimp Marinade:
10-20 pieces of cleaned shrimps
1/4 tsp of salt
1/4 tsp pf white pepper or black pepper
1/2 tsp of cooking wine
1/2 tsp of corn starch
1/4 tsp of sesame oil
Fried rice:
1 cup of rice
4 and 1/4 tsp of cooking oil
2 eggs
1 cup of carrots and peas
1/2 cup of onion
1/4 cup of green onion
1/2 tsp of salt
1/2 tsp of sugar
Notes:
1: Soak the rice at least 30 mins before cook the rice
2: Add little bit salt and oil to the water before boil the carrots and peas
3: Don't overcook the shrimp
4: Preheat the wok or pan before adding the rice
Directions:
Take 1 cup of the rice and wash the rice several times. Make sure to use fresh water each time until we see the clear water comes out. This step is very important. it will make the cooked rice less sticky. Soak the rice for 30 mins. Drain the rice. Add the washed rice, 1 cup of water into a rice cooker. I have always heard that fried rice is best made with day-old rice, but from my cooking experience… fresh-cooked rice works too. we just need to spread the rice out on a tray and let them cool for about 20-30 mins.
Crack 2 eggs and separate yolk from whites. Whisk the egg whites and mix the egg yolk with the rice. Marinate the shrimps by adding 1/4 tsp of salt, 1/4 tsp of white pepper or black pepper, 1/2 tsp of cooking wine, 1/2 corn starch and 1/4 Next, we are going to dice the carrot, onion. Chop the green onion.
After preparing all the ingredients. Turn on the stove add some water and turn the heat on high. Once the water starts to boil, add carrots and peas. let it cook for about 2 mins. Tun the stove off and take the carrot and peas out.
Get a fry pan. Turn the heat to median low. Add 1 tsp of oil and add the egg white. Stir fry until it’s cooked. When egg whites are cooked, remove from the pan and set aside. Add 1 tsp of oil and cook the shrimps with median high heat. Cook about 20-25 seconds for each side. Don’t overcook the shrimps, otherwise they will become hard and chewy.
I use a traditional Chinese wok to make the fried rice since this kind wok can handle the high cooking temperature. If you don’t have a wok, you can use non-stick fry pan as well. Turn the heat to the highest. Once you see the smoke are coming from the wok. We are ready to add the oil. Add about 2 tsp of cooking oil and then add the rice. lower the heat to median low. don’t stir it immediately. let it cook for about 20 seconds. And then we are going to stir fry for about 2 mins and season it with 1/2 tsp of salt and 1/2 tsp of sugar. Turn the heat to medium high and add onion first. Once you can smell the aroma, add the cooked egg white, shrimp, carrots, and peas. Stir fry about 1 min until rice is separate. Add green onion; Turn the heat to max high and stir fry about 30 seconds. Give it a taste and we are DONE!!!

Ingredients:
Serves 3 - 4 pax

160g (5.64 oz) shrimp / prawns, deshelled & deveined
1 bulb garlic, chopped
380g raw jasmine rice (Cooked with 450ml of water. If you're using a rice cup, measure 3 cups of rice and 3 cups of water and cook them together.)
1.5 teaspoons chicken stock powder
1 teaspoon ground black pepper
1 teaspoon salt
6 eggs, beaten
1 tablespoon fish sauce (you can use light soy sauce too)
5 tablespoons premium dark soy sauce (reduce this if your sauce is salty)

A Shrimp Fried Rice Recipe So Easy... You Must Try it!

Most people recommend using day-old rice to make fried rice for a fluffy result. This recipe is an exception. You can use freshly cooked rice. It doesn’t matter if your rice is wet and mussy either because mixing the egg with the rice keeps the grains from sticking to each other.
INGREDIENTS (serves 2 people)
2 cups (330g) of cooked rice
2 whole eggs
1 tbsp of soy sauce (Amazon Link -
1 tbsp of oyster sauce (Amazon Link -
1 tsp of dark soy sauce (Amazon Link -
1 tbsp of garlic chili sauce (any brand will work) (Amazon Link -
3 tbsp of oil to stir fry
1 tbsp of minced garlic
1/4 cup of diced onion
2/3 cups (80g) of diced vegetables
1 cup (150g) of peeled and deveined shrimp
1/4 tsp of salt
White pepper to taste (Amazon Link -
A drizzle of oil to marinade the shrimp
INSTRUCTIONS
Season the shrimp with some salt, white pepper, and a drizzle of oil. Mix well and set it aside.
Season the rice with soy sauce, oyster sauce, dark soy sauce, and Sambal chili sauce. The benefit of seasoning the rice before cooking is that you can take your time to get everything ready to avoid rummaging around when the heat is on.
Crack 2 eggs into the rice and mix well.
Turn the heat to high and heat the wok until smoking hot. Drizzle in some cooking oil, and swirl it around. Add the shrimp. Stir for just a minute. Once the shrimp change color, add the diced onion and garlic. Keep stirring until fragrant.
Add the diced vegetables and stir for a few minutes or until cooked through.
Remove the shrimp & vegetables from the wok. Drizzle more oil into the wok and add the rice. Stir over medium heat for a few minutes. Don’t use high heat otherwise, you will burn the egg. The rice will be gluey in the beginning. As the egg starts solidifying, the grains will separate naturally.
When the rice becomes fluffy, introduce the shrimp and the vegetables back to the wok. Sprinkle some diced scallions and sesame seeds for extra flavor. Give it a final toss and serve.
