Svekolnik is a go to classic in the summer in Russia. It's the easiest soup you'll ever make in your life: 3 steps and 3 ingredients.This cold beet soup is a total life saver in the summer. Cold, fresh, sweet and sour - so refreshing and delicious. This time I made it with a special cucumber twist, to compensate for lack of dill. Cheers!

Easy Breezy Summer Borscht | Chilled Beet Soup Inspired by the Barefoot Contessa
I LOVE beets and I love a good chilled soup. This Summer Borscht was inspired by the recipe in Ina Garten's cookbook - Barefoot Contessa, Cooking At Home.
The recipe (kinda)
• 5 medium beets, peeled and quartered
• 2-3 bay leaves
• 1 teaspoon salt
• Enough water to cover
*Cook the beets in the water with bay leaves and salt until they are tender and allow to cool. Keep the liquid to help thin out the soup.
*Once cooled, add a splash of cooking liquid to a blender, followed by 2/3's of the beets, the yogurt, a pinch of salt, and blend. Adjust as needed with the beet cooking liquid, salt, and/or more yogurt.
Then add:
• Fresh dill (a bunch)
• A handful of chopped pickled red onion (or 1/4 raw red onion, or shallot)
•The rest of the beets, chopped into a small dice
Stir to combine, chill thoroughly, and enjoy with a few extra bits of beets, dill, a drizzle of yogurt or olive oil, and a crack of pepper.

Cucumber Soup with croutons (cold soup) | Chłodnik z Ogórka z grzankami
The inspiration for this Cold Polish Cucumber soup with croutons in Polish Chłodnik z Ogórka z grzankami came to me thanks to my amazing friends. In this video I use home grown vegetables that I got from my friends to make this refreshing, fulfilling soup.
Soup is full of home grown cucumbers, zucchini, and peppers, with a lot of polish flavors like chives, dill, radishes. To add some texture and flavor I also show you how to make your own croutons.
INGREDIENTS
Soup:
2 cloves of garlic (chopped)
fresh dill (chopped)
fresh scallions (chopped)
fresh chives (chopped)
3 radishes (finely slices for garnish)
1 small chili pepper (chopped, 1/2 goes into the soup)
1 small cubanella pepper (chopped)
1 cucumber (grated)
1 zucchini (grated)
1 yellow squash (grated)
1 cup of greek yogurt
2 cups of kefir
salt & pepper
Croutons:
2 slices of bread of you choice (chopped 1 inch) here I use spelt bread
1/2 chili pepper
salt & pepper
olive oil
cayenne pepper

ककड़ी का ठंडा सूप को बनाना काफी आसान है। यह गर्मी के दिनों में बेहद फायदेमंद होता है। यह भूख बढ़ाने में मदद करता है। खीरा और शिमला मिर्च इसकी पौष्टिकता और बढ़ा देते हैं। तो आइए बनाते हैं कोल्ड कुकम्बर सूप।

5 लोगों के लिए आवश्यक सामग्री
दो कप खीरे क्यूबिक साइज में कटे हुए
½ कप बारीक कटा हुआ खीरा
¼ कप दही
दो चम्मच मक्खन
एक चम्मच कटी हुई शिमला मिर्च
नमक स्वादानुसार
सजाने के लिये
पुदीने की पत्तियां
काली मिर्च स्वादानुसार
विधि
एक पैन में 1 ½ कप पानी लेकर खीरे को उबाल लें। खीरे जब नरम हो जाएं तो इसे ठंडा करने के लिए रख दें।
अब इन बॉयल्ड खीरों को मिक्सी में डालकर दूध और दही डालें। साथ में थोड़ा सा नमक डालें और इसे मिक्सी में चलाएं।
अब पैन में मक्खन को पिघला लें। बारीक कटे हुए खीरे और शिमला मिर्च को इसमें डालें और दो मिनट के लिए फ्राइ करें।
अब मिक्सी में बने हुए सूप को इसमें मिला दें। इसे दो मिनट तक पकाएं। इसके बाद इसे थोड़ा ठंडा होने दें और 30 मिनट के लिए फ्रीज में रख लें। लीजिए तैयार है हमारा कुकम्बर सूप। इसे पुदीने की पत्तियां और काली से सजाकर सर्व करें।
