How To make Chili with Lamb and Black Beans
1 3/4 c Black beans, sorted and rins
2 qt Water, or more as needed
2 lb Lamb bones
4 ea Thyme sprigs
4 ea Parsley sprigs
1 ea Bay leaf
3 ea Garlic clove, crushed
6 T Olive oil
2 ea Large yellow onions, chopped
1 1/2 lb Lamb shoulder, ground
2 T Chili powder
2 T Fresh minced ginger
2 T Fresh Thyme, minced OR
2 t Dried Thyme, crumbled
1 T Red hot chilie, seeded and d
1 1/4 t Dried Marjoram, crumbled
3/4 t Fresh ground white pepper
3/4 t Fresh ground black pepper
3/4 t Cayenne pepper
3/4 t Allspice
2 lb Italian plum tomatoes, coars
1 1/4 c Light Zinfandel wine
1 x Salt as needed
FOR BEANS: Soak beans overnight in 2 qt. water. In a large saucepan, bring beans to a boil. Add lamb bones and bouquet garni and 1 crushed garlic clove. Reduce heat and simmer till beans are tender but not mushy. Skim occasionally and add more water if necessary to keep beans submerged. 2 hrs. FOR CHILI: Heat 3 T. oil in large heavy saucepan over moderate heat. Add onions and cook until soft, about 10 minutes. Add 2 cloves garlic, minced, and stir about 3 minutes. Transfer onion and garlic mixture to a plate, using a slotted spoon. Add remaining oil to pan. Increase heat to med. high. Add lamb and cook until no longer pink, breaking up with spoon, about 6 min. Return onion mixture to pan; add chili powder, ginger, thyme, red chili, marjoram, peppers and allspice. Stir 5 minutes. Add tomatoes ( and half of their liquid, if canned). Bring to a boil then reduce heat and simmer for another 5 minutes. Add 3/4 Cup of Zinfandel. Simmer, skimming occasionally, for 30 minutes. Drain beans and reserve the cooking liquid. Discard the bones and garni. add beans and remaining Zinfandel to chili mixture. Salt and season as necessary. Simmer 30 minutes, adding bean cooking liquid as needed to keep chili moist (or soupy, as you like it). This chili is best made ahead and allowed to season in the refrigerator for 24 hours. Reheat before serving. Serves 8.

Hope ya'll enjoy! The ingredients list is kinda long, but once you get all of your ingredients together everything else is a piece of cake! From time to time I like to experiment with different flavors to see what I can come up with. This is one of my many ways to make chili. It's so GOOD! Feel free to take out any ingredient that you don't like, this recipe is very forgiving.This chili taste BEST when served immediately after cooking.
*THIS IS A SLOW COOKER RECIPE*
Chili Recipe
Here's what I used in the video:
Power Quick Pot ( I'm using a 10 Qt)
1 Green bell pepper
3 Celery stalks
1 Yellow onion
5 Garlic cloves
2 lbs. of Ground beef (I used 80/20 lean)
2 Tsp Oregano
2 Tsp Brown sugar
2 Tsp Coriander
4 Tbsp Chili powder
3 Tbsp Ground Cumin
2 Tsp Dried Thyme
1 Tsp Smoked paprika
1/2 Tsp Dried Basil leaves
1/2 Tsp Black pepper
1/4 tsp Cayenne Pepper (to taste, gradually add more as needed)
Salt to taste ( I used 1 1/2 tsp)
1 Bay Leaf
4 Tbsp Green onions
2 16 oz Cans Kidney beans (rinsed and drained)
1/2 cup canned Black beans
1- 28 oz Can Hunts Diced tomatoes (with juices)
1- 29 oz Can Hunts Tomato sauce
1- 14.5 oz Can Swanson Chicken broth (low sodium)
2 Tsp Worcestershire sauce
*TIP - Taste as you go!!

Ingredients
- 3x dried ancho chillies, seeds removed and diced
- 500ml beef stock
- 2 tbsp beef tallow
- 700g 80/20 beef mince
- 1 red onion, finely diced
- 6 cloves garlic, finely diced
- 1 tbsp ground cumin
- 1 tbsp smoked paprika
- 1 tbsp ground coriander seed
- 1 tsp cinnamon
- 1 tsp cayenne pepper
- 2 tbsp tomato paste
- 2 tbsp chipotle in adobo
- 1 can diced tomatoes
- 1 tbsp maple syrup
- 400g cooked black eyed beans
- salt to taste
- sour cream and spring onion to serve
Method
1. Toast the dried ancho chillies in a pan for 2-3 minutes before adding them to a blender with the beef stock and blending until smooth.
2. In a large pan, heat the beef tallow over medium heat.
3. Add the beef mince then season with salt and cook until browned. Then remove and set aside.
4. Add the onion and garlic and cook until softened (add some more tallow if you need to).
5. Add the cumin, smoked paprika, ground coriander seed, cinnamon, cayenne pepper, tomato paste and chipotle in adobo. Cook for 2-3 minutes.
6. Add the diced tomatoes, beef, ancho chillies in beef stock, maple syrup and a pinch of salt.
7. Bring to a simmer. Turn to low and cook for 45 minutes with a lid, stirring often.
8. Add the cooked black eyed beans and cook for another 5 minutes.
9. Season with salt to taste.
10. Garnish with sour cream and spring onions.
11. Enjoy!

What we are making today is a really common dish that shows up in these restaurants. It is called 豉汁牛肉- also known as stir fry beef with black bean sauce. I got tons of request for this recipe and today is the day.

Ingredients for the beef marinade [serve 2]
- 350 grams of beef slice
- 2 tsp of soy sauce [Amazon Link:
- 1/2 tsp of salt or to taste
- 1/2 tsp of baking soda
- 1 tsp of grated garlic
- 1 tsp of grated ginger
- 1 tsp of cornstarch
Ingredients for stir-frying
- 2.5 tbsp of oil
