How To make Chili Non Carne
3/4 c Chopped onion
2 Cloves garlic
3 tb Olive oil
2 tb Chili powder
1/4 ts Basil
1/4 ts Oregano
1/4 ts Cumin
2 c Finely chopped zucchini
1 c Finely chopped carrot
28 oz Can tomatoes, drain & chop
14 1/2 oz Can tomatoes, drain & chop
15 oz Can-kidney beans,undrained
30 oz Can-kidney beans, drained
And thoroughly rinsed Chopped onions, tomatoes, Lettuce, or green peppers For garnish 1. In a large pot, saute onion and garlic in olive oil until soft. Mix
in chili powder, basil, oregano, and cumin. 2. Stir in zucchini and carrots until well blended. Cook for about 1 minute over low heat, stirring occasionally. 3. Stir in chopped tomatoes, undrained kidney beans, and drained kidney beans. 4. Bring to a boil. Reduce heat and simmer for 30-45 minutes or until thick. Top with chopped onions, tomatoes, and lettuce or green peppers. Makes 8 one cup servings @ 157 calories per serving.

Vegan Chili Con Carne - Chili Non Carne - Healthy Recipe
A simple and easy way to make a delicious, low fat, high protein, chunky chilli without meat, using vegetables, beans and spices.
5 portions:
2 x 400g cans of chopped tomatoes
1 x 240g drained black beans
1 x 242g kidney beans
3 x medium peppers (3 colours)
175g x red onions (3 medium)
2 x chilli peppers - spice depending on your tastes
3 x garlic cloves - sliced
70g tomato puree
pinch of salt
1 x teaspoon of smoked paprika
1 x teaspoon of cumin
Calories - 227g per portion
Fat - 1.2g per portion
Carbohydrates - 37.6g per portion
Protein - 12.2g per portion
Chili non carne... a vegetable based alternative that's oh so good!
No, it is not really anything like a real Mexican chili.. but it IS really delicious all the same! Completely vegetable-based, using red kidney beans, potato, bell pepper, onion, chili and garlic, with just a few more spices and aromatics, this hits all the right spots, but is lower in fat, cooked in a fraction of the time, at a fraction of the cost. I'll be making this one again for sure! And I'm guessing that if you watch the video and give it a try, you will too! Enjoy!
