How To make Chickpeas Italienne
1 1/2 c Dried chick peas, soaked*
1 tb Olive oil
1 md Onion, chopped
2 ea Garlic cloves, crushed
14 oz Canned tomatoes, chopped**
1 sm Can tomato paste
1 ts Basil
1 ts Oregano
1 ds Cinnamon
2 tb Parsley
Salt & pepper to taste Rinse chickpeas, place in fresh water & cook for 50 minutes or till tender. Heat oil in large pot & saute onions & garlic for a few minutes. Add the tomatoes & tomato paste. Bring to a boil, lower heat & add the rest of the ingredients. Simmer for about 10 minutes or until the sauce has thickened. Serve with mashed potatoes & green vegetables or pasta or rice. * Or substitute one large can of chickpeas, rinse well before using. ** Or use one pound of fresh tomatoes, diced

Braised Chickpeas Healthy Mediterranean style
This chickpea recipe is Mediterranean Greek style and so healthy. It’s cheap to make and perfect when there’s a shortage of fresh ingredients. The chickpeas can be used from cans or dried in packets. If dried, you’ll have to soak them overnight, then cook them until tender. Accompany them with rustic sour dough bread that’s been toasted, drizzled with olive oil. A great meal at anytime. Our recipe is Italian-inspired. The chickpeas are simmered in a rich broth enriched with herbs like rosemary and thyme, tender potatoes, and tomato paste.
⭐️ INGREDIENTS
2 tablespoons (14 grams) extra virgin olive oil
1 onion chopped
1 carrot chopped
1 rib celery chopped
2 cloves garlic pressed
1 leek thinly sliced
3 tablespoons tomato paste
1 bay leave
1 sprig rosemary
4 - 6 cups (500 grams) of vegetable broth add 2 cups at a time
2 cans (15 ounces each) (480 grams) of chickpeas or 3 cups of cooked chickpeas
1½ pounds (680 grams) potatoes peeled and cut into bite-size pieces
1 can (15 ounces) (400 grams) crushed tomatoes
1 teaspoon salt or more to taste

1 ripe avocado optional
