Ingredients – Grilled chicken
Chicken Breast – 500gm (3no)
Garlic – 7 to 8 cloves – Smash in mortar pestle to make paste
Apple Cider Vinegar – 1Teaspoon
Black Pepper Powder – 1 teaspoon
Herbs – 1 teaspoon
Sugar – ½ teaspoon
Oil – 1 tea spoon
Salt as per taste
Oil for pan frying – 1 table spoon
Method,
• Marinate Chicken breast with Crushed garlic, vinegar , oil , salt, Black pepper, sugar and Keep for 20 min.
• Head the grill pan, grease with oil lightly, sear chicken on high flame on both side and cook on medium heat for 8 to 10 min till cooked turning in-between.
• Rest for 5 to 8 min before slicing.
Ingredients – Salad
Iceberg lettuce- 1 bulb
Tomatoes – 2 no (remove seeds and cut in Cubes)
Onion – 1 red , 1 white small size
Cucumber – 2 no ( peel and remove seeds )
Olives – 2 table spoon
Mayonnaise - 1/3 Cup
Honey – 1 table spoon
Mustard - ½ teaspoon
Black pepper – ½ tea spoon
Lemon juice – ½ lemon
Salt as per taste
Method –
• Cut the lettuce and deep in ice cold water for 10 min and drain.
• Cut all vegetables keep ready
• In a salad bowl Mix Mayonnaise, Lemon juice, salt, Honey, Mustard, black pepper and mix well
• Toll all veg in dressing and serve immediately with grilled chicken

There are several ways you can make chicken curry with each region having its own special way of making it. Today I will show you how to make a Punjabi chicken curry. This chicken curry is extremely delicious as ghee is used but you can even use butter if you do not have ghee on hand.
Ingredients required for making Punjabi chicken recipe -
For marination
* 1.1kg/2.4 lb boneless skinless chicken thighs. You can even use chicken with bones.
* 1/4 th cup plain unflavored yogurt
* 1/2 teaspoon turmeric powder
* 1/4 th teaspoon kashmiri red chilli powder. You can even use cayenne pepper or paprika
* 1/2 teaspoon salt
* 1/2 teaspoon coarsely crushed black pepper.
For the gravy -
* 10 cloves / 35 gm/ 1.2 oz garlic
* 2 & 1/2 inch length/ 32 gm/ 1.1 oz ginger
* 1 very large onion or 4 medium onions
* 1 large tomato
* 1/2 teaspoon turmeric powder
* 2 heaped teaspoon Kashmiri red chilli powder. Please adjust proportion according to preference. You can even use paprika if you want to avoid the heat.
* 1 tablespoon heaped ground coriander (dhania powder)
* 1/2 teaspoon kasoori methi (dried fenugreek leaves). Adding a lot of fenugreek leaves may make your curry bitter.
* 1 heaped teaspoon garam masala powder.If you want to make your own garam masala powder then please follow this recipe -
* 2 tablespoons mustard oil or any oil of your preference. If using mustard oil please heat it up first on high heat till it starts smoking. Then lower the heat to low and bring down the temperature of the oil a little bit before adding your whole spices.
* 2 tablespoons ghee (Add 1 tablespoon with oil and another tablespoon along with ground coriander. If you want to make your own homemade ghee then please follow this recipe -
* 1 large dried bay leaf
* 7 green cardamoms (chat elaichii)
* 7 cloves (lavang)
* 2 inch length cinnamon stick (dalchini)
* 1/2 teaspoon whole cumin seeds (jeera)
* 2 whole green chillies (optional)
* coriander leaves a handful or leave it out if you do not like it.
* 1 teaspoon salt or as per taste
Serve this with rice/roti/paratha/naan.

Ingredients:
For Mustard Vinaigrette:
2 tbsps Dijon mustard
1 tbsp fresh parsley (or basil, chives), finely chopped
1 tbsp balsamic vinegar
¾ cup olive oil
Salt and ground black pepper to taste
For Chicken Salad:
4 pcs chicken breast halves, roughly 24 oz in total, boneless and skinless
3 tbsp extra-virgin olive oil, divided
Salt and ground black pepper to taste
1½ cups romaine lettuce leaves, washed, dried, and torn
3 cups spinach, washed, dried, and trimmed
½ lb fresh oyster mushrooms or any mushrooms of your choice, (preferably cremini, or shiitake), trimmed, wiped clean, and thickly sliced
To serve:
Parsley, (or basil, chives), fresh, finely chopped

Mustard Vinaigrette:
0:09 In a small mixing bowl, stir together the mustard, fresh herbs, and vinegar.
0:26 Season with salt and pepper then slowly whisk in the oil. Adjust the flavor according to your taste and set aside.
Chicken:
0:35 Preheat the broiler to 365 degrees F.
0:40 Lightly brush the chicken breasts with 1½ tablespoon of olive oil.
0:47 Season both sides of the chicken with salt and pepper.
0:53 Place the chicken breasts in a shallow baking pan and place them in the oven. Roast for 6 to 8 minutes until cooked through. To check, slice into the thickest part of the chicken and make sure the middle is no longer pink.
Salad:
1:01 Heat a large skillet over high heat and add remaining olive oil. Sauté the mushrooms for about 4 minutes until they begin to turn golden. Season with salt and pepper to taste then set aside.
1:29 In a serving bowl, toss romaine and spinach leaves together. Pour roughly 6 tablespoons or just enough vinaigrette onto them to coat lightly.
1:47 Cut each chicken breast into 6 diagonal slices.
2:03 Divide the salad leaves among serving plates then arrange the chicken slices over each bed of greens.
2:10 Arrange roughly 1½ tablespoons of sautéed mushrooms per serving around the leaves.
2:17 Spoon roughly 1 tablespoon of vinaigrette over the chicken and garnish with fresh herbs. Serve immediately and enjoy!
