How To make Chicken with Avocado and Roasted Pepper Cream
3 Yellow, green or red
Bellpeppers 1 c Uncooked rice
2 c Heavy cream (divided use)
1 tb Vegetable oil
6 Boneless, skinless chicken
Breast halves Salt end pepper to taste 2 Avocados
1/2 c Sour cream
Preheat oven broiler. Arrange peppers on roasting pan. Place under hot broiler, about 5 inches from heat; cook till skin turns black. Turn frequently to char all sides. Remove peppers from roasting pan and place in a plastic bag. Close tightly and allow to steam 10 minutes. Cook rice according to package directions. When rice is done, remove from heat and keep warm. Carefully remove peppers from bag. When peppers are cool enough to handle, slip off and discard charred skins. Hold peppers under cold running water to make peeling easier. Chop peppers coarsly. In work bowl of food processor, combine peppers with 1 cup heavy cream. Process until smooth. Stir in remaining cream; set aside. Heat vegetable oil in large skillet over med-high heat. Cook chicken breasts until brown on both sides. Season to taste with salt and pepper. Pour cream mixture over chicken. When mixture comes to a boil, reduce heat to a vigorous simmer. Cook until sauce is reduced and slightly thickened, about 20 to 30 minutes. Adjust season- ing to taste. Right before serving, peel and thinly slice avocados. Remove chicken breasts from heat and stir sour cream into sauce. Serve chicken breasts over rice with plenty of sauce and garnish with avocado slices. Makes 6 servings.

Ingredients:
For the chicken:
1 Chicken breasts, skinless
1-2 tablespoons Oil
1/2 teaspoon Salt
1/2 teaspoon Pepper powder
1 teaspoon Chilli flakes
1/2 tea spoon ginger garlic paste
1/2 tea spoon thyme or parsley
For the salad:
1/2 cucumbers chopped
1onion, chopped
4-5 leaves Lettuce, chopped
1 medium tomato
2 to 3 olives
For the dressing:
1/4 cup Mayonnaise, low fat
1/4 cup Greek yogurt, low fat
1/2 tea spoon pepper powder
2 1 tea spoon apple cider vinegar
1/2 tea spoon Salt or as per to taste
1/2 tea spoon of parsley

INGREDIENTS
1 avocado
1 red onion
1/2 apple
2 limes
Salt
Pepper
1 tablespoon olive oil
10 ounces (285 grams) chicken breast, thinly sliced
1 teaspoon chili flakes
1 teaspoon vegetable oil
1 red chili, thinly sliced
1 red bell pepper, sliced
1 yellow bell pepper, sliced
2 garlic cloves
1 green chili, sliced
1 tablespoon heavy cream
2 tortilla wraps
Chives
PREPARATION
Mince the avocado, red onion, and apple. Squeeze half a lime on top. Keep the remaining half and slice it.
Season with salt, pepper, and add olive oil. Mix.
Place the chicken in a large bowl. Squeeze the juice from the second lime on top. Season the chicken with salt, pepper, and chili flakes.
Pour a small drizzle of oil on your electric grill. Place the chicken on the grill and cook it for around 15-18 minutes.
Remove the chicken and place the chili peppers, lime slices, garlic, and bell peppers.
Grill them for 2-3 minutes.
Place the minced veggies in a blender along with half of the grilled ones. Pour the heavy cream.
Blend until smooth.
Place the tortilla wraps on your working surface. Top them with avocado mash, grilled chicken and veggies.
