How To make Chicken with Apples and Bacon
3 slices turkey bacon
chopped
12 chicken thighs without skin
2 sm onions :
halved & sliced
1 1/4 c apple juice
2 Granny Smith apples -- peeled and sliced
1 tbsp dijon mustard
1 tbsp balsamic vinegar
1 tsp dried thyme
1 tsp salt
1/2 tsp pepper
1 1/2 tsps cornstarch
In a large pot, cook bacon over medium heat until browned and crisp, about 3 minutes. Transfer bacon with a slotted spoon to a piece of paper towel to drain. Discard all but 2 tsp of fat from pan. Add half of the chicken and brown well, about 2 minutes per side. Remove to a plate and repeat with remaining thighs.
Reduce heat to medium-low and add onions to pan. Cook, scraping up browned bits at bottom of pan, until onions are browned and beginning to soften, about 4 minutes. Add apple juice, apples, mustard, vinegar, thyme, salt, pepper and reserved bacon and chicken thighs to pan. Cover, reduce heat to low and simmer gently, stirring occasionally, until chicken is no longer pink in center, 20 to 25 minutes.
In a small bowl, stir cornstarch together with 2 tsp water; stir into sauce. Cook until sauce thickens, about 1 minute.

French Chicken Casserole with Apples and Apple Cider | Delicious Creamy Chicken Recipe
This French Chicken Casserole is going to be your new seasonal favourite. Chicken thighs and legs slowly braised in apple cider and served with fried apple wedges are as scrumptious as it sounds.
Chicken casserole is an incredibly general term and basically means chicken cooked slowly in the oven until tender. A good casserole is always what I go to when I want a true comfort food for dinner.
What you add to that chicken will make all the difference, and in my case I went with a French recipe for Chicken a la Normande. In this recipe chicken thighs and legs are slowly braised in a dry apple cider. Can you just imagine the aroma that is going to fill your house?!
INGREDIENTS
1 tbsp olive oil
2 lbs chicken thighs and legs
salt
4 shallots diced or one medium onion
1 rib celery diced
4-5 thyme sprigs
2 cloves garlic minced
125g/4 oz bacon lardons or 6 strips of bacon, chopped
2 tbsp brandy or whiskey
2 tbsp flour
85 ml/1/3 cup chicken stock
400ml/1 1/2 cups hard dry apple cider such as Strongbow
2 apples peeled, cored and cut into wedges
125ml/1/2cup double cream/heavy cream

BRUSSELS SPROUTS WITH BACON + APPLES
1 lb Brussels sprouts trimmed and halved
4 slices organic bacon
1 small onion chopped
2 medium tart apples diced (either Pink Ladies or Granny Smith)
1 tbsp organic butter
1/4 cup chopped parsley dill would also be great here!
Salt and pepper to taste
INSTRUCTIONS
Place bacon on a microwave safe plate and cover with a paper towel. Cook bacon for four minutes or until your bacon is nice and crispy.
Melt butter in a large sauté pan and cook onion along with a pinch of salt.
While the onion is cooking place Brussels sprouts in a steamer basket and steam for eight to ten minutes or until they are nice and tender.
Once your onions are translucent, toss in your apples and cook for another four to five minutes. You are looking for your apples to get nice brown edges and to become just slightly tender.
Once the apples and the onions are ready to go, toss in the Brussels sprouts and season with some salt and pepper. Crumble the bacon over the Brussels sprouts and toss with your parsley. Adjust your seasoning and enjoy!!
Makes 4 servings.
NOTES
If you want to skip the bacon, you can add it some capers for a bright, salty flavor without the meat.

Stove Top Brussel Sprouts with Bacon and Apples
INGREDIENTS:
1 pound brussel sprouts cleans, ends cut and halved/quartered
1 cups diced onions
1 cup diced apples - I used Fuji
4 slices bacon - cooked and broken in small pieces
2-3 tbsp. butter
salt and black pepper
In a skillet cook bacon until done and crispy. Remove from pan, cool and break
into small pieces.
In same skillet on medium heat add butter and diced onions.
Cook and stir for 2 minutes.
Add brussel sprouts, salt and black pepper.
Stir and cook for 7-10 minutes stirring occassionally.
Keep heat to low medium, around 5 on my electric stove.
Add diced apples and cook for another 5 minutes.
Add bacon and stir to combine.
Serve and enjoy.

Chicken thighs fried in butter and olive oil, red onions and smoked and plain streaky bacon.Three types of apples from the allotment, Weston's cider, petits pois, mashed potatoes (Some from the allotment. ) steamed rice, recycled from last night.
