How To make Chicken and Rice Avgolemono
1 tb Vegetable oil
1 c Chopped onion
12 ea 3-ounce skinned drumsticks
3 c Low-sodium chicken broth
6 oz Long grain white rice
1/2 c Egg substitute
2 tb Flour
2 Lemons; juiced OR...
3 oz -Reconstituted lemon juice
20 oz Frozen chopped spinach
- thawed, thoroughly drained -- and squeezed dry 6 Sprigs fresh dill; chopped
-OR- 2 ts -Dried dill
FOR GARNISH:
Lemon slices (optional) In large nonstick saucepan, heat oil. Add chopped onions and cook, stirring occasionally, until tender. Add drumsticks and brown on all sides; remove drumsticks to a plate. Add chicken broth and rice to saucepan and stir until rice grains are separated. Return chicken to pan; cover and simmer until chicken is cooked through, about 15 minutes. While chicken and rice are simmering, whisk together egg substitute, flour and lemon juice in a small bowl; set aside. With slotted spoon, remove cooked drumsticks to a plate and keep warm. Add spinach and dill to rice mixture and cook over medium heat; stirring frequently, until rice has absorbed all the liquid in the pan, about 5 minutes. Pour in egg mixture and stir until just heated through, about 1 minute. To serve, spoon rice mixture onto serving platter; top with chicken and garnish with lemon slices. Greek Lemony Chicken Avgolemono Soup, 2 WAYS!

How to Make Avgolemono Greek Soup (Kotosoupa Avgolemono)
The Best Greek Chicken Soup (Kotosoupa Avgolemono)
Ingredients
1x whole chicken
2x teaspoons salt
1x chicken stock cube (optional)
4x eggs
250ml lemon juice
1x cup washed rice (medium grain)
Black pepper to finish
Process
1. Cut up a whole chicken into pieces and put into a large pot with 5 litres of water
2. Add in 2 teaspoons of salt and 1 chicken stock cube
3. Bring to boil and leave it cooking for 1 hour (until the chicken is cooked)
4. Separate the egg yokes from the whites
5. Beat the egg whites until fluffy and creamy. Once the egg whites are fluffy, add in the egg yolks
7. Once chicken is boiled (after the 1 hour) remove the chicken from the water and set aside
8. Pour the chicken stock water through a sieve to remove the excess solids from the water and return the liquid back to a clean pot
9. Remove one large cup of water from the pot and set aside to cool (this will be used to add into the egg and lemon mix afterwards)
10. Place the rest of the water in the pot back onto boil and add in your rice
11. Debone your cooked chicken and peel the chicken into shreds whilst your rice cooks
12. Once your rice is done, add your lemon into your frothy egg mixture and slowly add in the cup of warm chicken stock water and mix together (this process warms up the egg mixture so when you add it into the water with the rice, it won’t curdle)
13. Slowly pour the egg/lemon mixture to your large pot with rice whilst continuously stirring
14. Once all mixed through, it’s all ready! Get a ladle and serve it into a bowl, add your chicken and sprinkle some pepper!

Chicken lemon rice soup, also known as Avgolemono, is a classic Greek chicken soup that's thickened with eggs, loaded with rice, and flavored with lemon.
It is a hearty, delicious soup requiring minimal effort, and is ready in only 30 minutes!
It doesn't matter whether it is soup season or not, this chicken soup can and should be enjoyed year-round.
If you've ever been to a Greek restaurant, you might be familiar with this soup.
It uses super simple ingredients, and it's incredibly easy to make.
As it cooks, it will thicken nicely.
To make this chicken lemon rice soup, you'll need the following ingredients:
1 tablespoon olive oil
1 small onion, chopped
1 medium carrot, chopped
1/2 cup Arborio rice (an Italian short-grain rice)
4 cups low sodium chicken broth (store-bought or homemade)
3 tablespoons lemon juice, freshly squeezed
3 eggs
2 small, skinless and boneless chicken breasts, cooked and shredded with 2 forks
1/2 teaspoon salt or to taste
1 teaspoon pepper or to taste
1/4 cup dill, chopped
