How To make Chicken a La Theresa
5 skinless boneless chicken breasts
halved
dry white wine :
for marinade 1 pound mushrooms sliced
12 pitted green olives :
chopped
1 clove garlic -- chopped
3/4 stick butter
1/4 cup heavy cream
salt and freshly ground pepper chopped fresh parsley sauteed cherry tomatoes
Marinate chicken in enough white wine to cover, at least 2 hours. = In a large skillet saute mushrooms and garlic in butter until lightly = browned, add olives and heavy cream. Cook the mixture over moderately = high heat, stirring until cream is absorbed. Arrange chicken breasts = over in a buttered shallow baking dish large enough to hold them in one = layer. Spread the mushroom mixture over the breasts, drizzle on a little = of the wine. Cover the dish with a buttered of wax paper and foil. Bake = in preheated 350=B0 oven for 15-20 minutes until cooked through. = Transfer chicken to a heated platter and garnish with chopped parsley = and cherry tomatoes.

EASY CLASSIC CHICKEN PARMESAN Recipe
Classic Chicken Parmesan is as good as it gets! This parmesan crusted chicken is smothered in marinara and melted cheese and has the juiciest chicken breast. Chicken Parmigiana is so easy!

Ingredients for Chicken Parmesan (4 servings):
►1 1/2 lbs (2 large) chicken breаsts cut in half for 4 cutlets
►1/2 cup all-purpose flour
►1 tsp salt, or to taste
►1/2 tsp black pepper, or to taste
►2 large eggs beaten until frothy
►1/2 cup Italian bread crumbs
►1/2 cup parmesan cheese, shredded
►2 Tbsp extra light olive oil to sauté or as needed
►24 oz marinara sauce
►4 oz mozzarella cheese (1 cup shredded)
Easy Homemade Marinara Sauce (3 cups):
►2 Tbsp olive oil
► 1/2 medium yellow onion
►3 garlic cloves, minced
► 28 oz crushed tomatoes:
► 1/2 tsp dried oregano
► 1/2 tsp salt
► 1/4 tsp black pepper
► 1 Tbsp basil or parsley, finely minced

Chef Theresa Lin’s Nourishing Ginseng Chicken Soup
Based in Los Angeles, Chef Theresa Lin has been called a food ambassador, even a culinary diplomat, for her work as an author, radio show host, and TV personality. In 1994, she worked alongside Taiwanese filmmaker Ang Lee as the food designer for “Eat Drink Man Woman.”
For our American Ginseng: Local Knowledge, Global Roots project, Chef Theresa shared her family’s recipe for nourishing ginseng chicken soup, flavored with ginger, red dates, and goji berries. She uses fresh ginseng grown by Hsu's Ginseng Enterprise Inc. in Wisconsin, praising the root for its medicinal properties.

Veal is a protein we don't cook very often, but this recipe from our mother Teresa’s Veal and Peppers seemed like an ideal comfort-food meal to prepare for today’s menu. Mom guides us through making this excellent veal recipe that has been in our family for many decades. We used a veal scaloppini cut for this veal & peppers recipe, which included a variety of fresh sweet peppers. Once the veal is added to the peppers and onions, the veal is super tender and the thick sauce is richly flavored with the wonderful combination of slowly cooked meat, tomato sauce and sweet peppers, and onions. Great served over pasta, rice or even on a crusty sandwich bread.
