How To make Chicken Tequila
1 c Strong chicken stock
9 oz Whole tomatoes; undrained
3 Cloves garlic; minced
2 Chicken breasts; boneless
1/2 c Tequila
2 Juice from two limes
Heavy dash cayenne pepper 1 ts Chili powder
1 ts Cumin
1/2 ts Coriander
Salt to taste Olive oil Simmer the chicken breasts in the stock, until tender. Remove and cube. Set aside, reserving stock. Saute' the garlic in olive oil. Add tomatoes (breaking up) and the remaining ingredients; simmer, covered 1/2 hour. Add chicken and re-heat. Toss with cooked noodles. If sauce
becomes too thick, add the chicken stock. Sprinkle with Parmesan cheese and garnish with fresh basil or parsley leaves.

Turn these traditional cocktail ingredients into a zesty and flavorful marinade for grilled chicken. It’s a dinner that’s sure to be a hit all summer long and, if you want to kick up the heat, add some jalapenos!
Grilled Tequila Lime Grilled Chicken
Serves: 8
Ingredients
3 lbs. Gerber's CARE Certified boneless skinless chicken breasts
1 cup tequila
¾ cup Heinen's fresh squeezed orange juice
Juice of 2 limes
Zest of 1 lime
5 garlic cloves, finely minced
2 tsp. Heinen's coriander
2 tsp. Heinen's cumin
2 tsp. Heinen's chili powder
2 tsp. salt
¼ tsp. pepper
2 jalapeños, seeded
Instructions
1. Add the chicken breasts to a casserole pan or plastic Ziploc bag.
2. In a bowl, whisk together the tequila, juices, zest, garlic, spices, salt and pepper until combined.
3. Pour the marinade over the chicken breasts and add the seeded jalapeños. Mix until combined.
4. Marinate in the refrigerator for at least one hour or overnight.
5. Preheat the grill to high heat, between 450°F and 550°F.
6. Remove the chicken and jalapeños from the marinade and place them directly on the hot grill. Cook for 4-5 minutes per side, or until dark grill marks have formed and the chicken is cooked through.
7. Serve the chicken and jalapeños with limes and an optional garnish of chopped fresh cilantro.

Tequila Lime Marinade;
-1 cup lime juice
-1/2 cup orange juice
-2 tablespoons minced garlic
-2 tablespoons minced cilantro
-2 tablespoons honey
-2 tablespoons brown sugar
-1 jalapeno diced
-1 shallot minced
-2 teaspoons salt and 1 teaspoon pepper
-3 tablespoons oil
-1/4 tequila
Mix all together. Enough marinade for 24 chicken breasts.
