Chicken 65, the street side way cooking is a spicy, deep-fried chicken dish served as a quick snack, entrée or bar snack. Chicken pieces nicely coated with ginger garlic, pepper pd, vinegar, red chilli pd and dusted with some corn starch and all-purpose flour to make it crispy is truly a great dish.
Ingredients:
Corn starch 1 Teaspoons
Red chilly paste 1 Tablespoons
Coriander chopped 1 Bunch
Curry leaves 3 Springs
Salt To Taste
Garam masala 1/2 Teaspoons
Pepper powder 1/2 Teaspoons
Chilly powder 1/2 Teaspoons
Ginger garlic paste 1 Teaspoons
Chicken (with bone) 500 Grams
All purpose flour 1/2 Teaspoons
Vinegar 1 Teaspoons
Oil for deep fry
Green chilly 2 Numbers
Directions:
Take a bowl add chicken pieces, add ginger garlic paste, chilly powder, pepper powder, garam masala, curry leaves chopped, chopped coriander leaves, salt, mix it well, and put it into the refregirator for 2 to 4 hours, then add red chilly paste, corn starch, all purpose flour, vinegar, mix it well and deep fry the chicken in the hot oil, and also deep fry green chilly, curry leaves with chicken.

This beef stir fry recipe is my go-to quick dinner. It's easy to make, and cheap and most of the ingredients should already be in your pantry making it even cheaper. It's also a great recipe for using up any leftovers as you can add all sorts of different vegetables.

Serves - 2-4 People (Depending On Portion Size)
Ingredients -
3 Tbsp (60ml) - Peanut Oil (See Notes Below)
350g (12.3oz) - Beef Steak (I Used Rump), Thinly Sliced
2 1/2 Tbsp (50ml) - Shaoxing Wine
2 tsp (6g) - Corn Flour
1 - Small Brown (Yellow) Onion, Thinly Sliced
1 - Carrot, Washed & Julienned (Matchstick Cut)
5 - Garlic Cloves, Minced
10g (0.35oz) - Ginger, Peeled & Minced
2 - Baby Bok Choy, Chopped Leaves & Stems Separated
3/4 Cup (180ml) - Chicken Stock
2 1/2 Tbsp (50ml) - Light Soy Sauce
1 1/2 Tbsp (30ml) - Shaoxing Wine
1 tsp (5ml) - Black Vinegar
1 1/2 Tbsp (30g) - Oyster Sauce
3 tsp (10g) - Corn Flour
Pinch of Sugar (Optional)
300g (10.5oz) - Noodles of Choice (I Used Fresh Egg Noodles)
Ground White Pepper To Taste
Spring Onion (Scallion) To Serve (Optional)
Chilli Oil (Optional) -
Recipe Notes -
If you have any allergy concerns, peanut oil can be substituted with vegetable or sunflower oil.
I used fresh egg noodles for this recipe however any noodles work well for this dish. I was using up what I had on hand but my personal favourite is Hokkien noodles.
If you can't consume alcohol, the Shaoxing wine can be substituted with rice vinegar or chicken stock. If using rice vinegar as a substitute, I recommend adding in a pinch of sugar to cut back the acidity as well as using half the amount in the recipe.

Recipe -
Tandoori Chicken -
1.2kg (2.6lbs) - Chicken Thigh, Boneless & Skinless
250g (8.8oz) - Plain Greek Yogurt
2 tsp (5g) - Garam Masala
2 1/2 tsp (7g) - Ground Cumin
1 tsp (2g) - Red Chilli Powder (Optional)
1 1/2 tsp (4g) - Sweet Paprika
1 1/2 tsp (3g) - Ground Turmeric
1 1/2 tsp (3g) - Ground Coriander
4 - Garlic Cloves, Minced
20g (0.7oz) - Ginger, Peeled & Minced
2 - Small Limes, Juiced (1 Large)
2 Tbsp (40ml) - Peanut or Vegetable Oil
Seasoning To Taste
Turmeric Rice -
1 Tbsp (14g) - Ghee or Clarified Butter
320g (11.2oz) - Basmati Rice, Washed
1 1/2 tsp (3g) - Ground Turmeric
640ml - Chicken Stock
3 - Bay Leaves (Optional)
Salt To Taste
Raita -
170g (6oz) - Plain Greek Yogurt
1/4 - Cucumber, Grated
3/4 tsp (2g) - Ground Cumin
3g (0.1oz) - Coriander (Cilantro), Roughly Chopped
3g (0.1oz) - Mint, Roughly Chopped
Seasoning To Taste
Chicken Cooking Methods -
Griddle Pan -
Heat the griddle over high heat, add in the chicken, and sear for 5-6 minutes on each side or until lightly charred. Remove & rest.
Flat Skillet -
Heat the skillet over high heat, and add in the peanut or vegetable oil instead of adding it to the chicken beforehand. Sear for 5-6 minutes or until golden. Remove & rest.
Oven -
Preheat oven to 200.c - 390.f. Line a baking tray with parchment paper. Lay out the marinated chicken, ensuring it's not overlapping, and bake for 16 minutes, flipping it halfway. Remove & rest.
Chicken Breast -
If you wish to use chicken breast, follow the same recipe but butterfly the chicken and sear for 3 1/2 minutes on each side.
