How To make Chicken Piccata (Frugal Gourmet)
1 sm Yellow onion; peeled & chopp
2 Cl Garlic; crushed
4 Onions; finely chopped
8 Chicken breasts
2 tb Olive oil
1/2 c Flour
Salt and pepper; to taste 2 tb Butter
2 tb Dry sherry
2 tb Fresh lemon juice
1 tb Capers; chopped
2 tb Hicken stock; (optional)
8 Lemon slices
2 tb Chopped parsley
Recipe by: Pat Campbell <pcampbel@CCSMTP.REDSTONE.ARMY.MIL> Saut the yellow onion, garlic and gr onions in the olive oil just until tender. Remove from the pan and set aside. Remove skins and bones from chicken breasts and pound them flat. Mix flour, salt and pepper together and place in flat bowl. Dip chicken into flour mixture, lightly brown chicken in butter 2 or 3 minutes per side. Add the sauted onions and garlic. Over high heat add sherry, lemon juice and capers. This should thicken to make a nice gravy for chicken. Per Vidalia discussion. This recipe is delicious if you are a vidalia onion fan like myself -----

INGREDIENTS:
2 Boneless Skinless Chicken Breasts (THIN SLICED)
2 Big Lemons
1 Cup of Chicken Stock
1/2 Cup of Dry White Wine
1/3 Cup of Freshly Squeezed Lemon Juice
1/3 Cup of Fresh Chopped Parsley
1 Stick of Butter Divided as so:
2 TB of Butter (Melted in pan with 1 TB of Olive Oil to Saute Chicken)
1 TB of Butter (Saute Garlic)
3 TB of Butter (Swirl into the sauce)
FLOUR DREDGE:
1/2 Cup of Flour
1/2 TS of Onion Powder
1/2 TS of Garlic Powder
1/2 TS of Paprika
1/4 TS of Pepper
ITEMS YOU NEED:
Cooling Rack
Cookie Sheet
Malette (To pound chicken breast or just buy them thin)

2 1/2 Tbsp (35g) - Unsalted Butter
4 - Large Brown (Yellow) Onions, Thinly Sliced
1/4 Cup (60ml) - White Wine or Beef Stock (alcohol substitute)
6 - Sprigs Fresh Thyme
5 - Dried or Fresh Bay Leaves
1/3 Cup (80ml) - Beef Stock
2 tsp (10ml) - Balsamic Vinegar
2 tsp (10ml) - Worcestershire Sauce
3 - Garlic Cloves, Grated
Seasoning To Taste
Chicken & Seasoning & Cheese -
3 tsp (15ml) - Olive Oil (2 tsp - 10ml separated)
2-3 - Chicken Breast, Butterflied & Halved
1 tsp (2.5g) - Onion Powder
1 tsp (2.5g) - Garlic Powder
1 tsp (2.5g) - Smoked Paprika
Seasoning To Taste
Gruyere Cheese, Grated
Parmigiano Reggiano Cheese, Grated
Green Beans (Optional) -
1 Tbsp (20ml) - Olive Oil
300g (10.5oz) - Green Beans, Trimmed & Cleaned
1 - Garlic Clove, Grated
Seasoning To Taste
