3.00 Peppers, cut into strips
-(red, yellow and green) 1.00 lb Chicken tenderloins
French's Fajita Seasonings 0.75 c Water
1.00 cn Lindsay Sliced Ripe Olives
1.00 lg Tomato cut into wedges
Durkee Salsa Party Dips Durkee Guacamole Party Dips Fresh chopped cilantro In a large skillet heat vegetable oil. Saute onion and peppers until tender. Remove from skillet and set aside. In same skillet, brown chicken tenderloins. Add French's Fajita Seasonings and water. Blend well. Bring to boil; reduce heat and simmer uncovered, 3-5 minutes. Return vegetables to skillet to heat; add Lindsay Sliced Ripe Olives and tomato cut into wedges. To serve: Portion chicken mixture onto warm tortillas and garnish with Durkee Salsa Party Dips and Durkee Guacamole Party Dips and fresh, chopped cilantro.

1 chipotle in adobo sauce

These are mouthwatering and incredibly easy to make! Perfect if you want a quick delicious lunch or dinner!

For the Chicken:
• 2 chicken breasts (cut into thin strips)
• 2 tsp paprika
• 1 tsp garlic & onion powder
• 1 tsp cumin
• 1/2 tsp chilli powder
• 1 tsp salt & pepper
• 1 or 1/2 lime juice
Mix well till it changes colour
For the green sauce:
• 4 tbsp fat free yogurt (greek yogurt works)
• 1 tbsp low fat sour cream (i bought one which had chives in it)
• Handful coriander/ cilantro
• 1 tsp garlic
• 1/2 lime juice
Blend till completely smooth
Process:
1 tsp olive oil in a hot pan, cook the chicken for about 5 mins till golden brown. Add
• Half red, green and yellow bell peppers
• Half red and white onion
Let it cook for another 5 mins then assemble
• Low calorie wrap (you can get high protein ones)
Add the filling and the sauce and ENJOY!!
This makes 2 fajita wraps (possibly 3 depending on the size of them)

1 tbsp Oregano

2 tsp Cumin
1 tbsp Smoked Paprika or Regular Paprika
1 tsp Salt & Pepper
1/2 Lemon Juice
2 tsp Olive Oil
For the Rice
200g Uncooked Basmati Rice (Approx. 520g Cooked Rice - 130g per serving)
400-420ml Water
1 tsp Salt, Paprika, Cumin, Garlic Powder, Turmeric
1/2 Medium Red & White Onion Sliced
1/2 Red Bell Pepper Sliced
1/2 Green Bell Pepper Sliced
For the Green Sauce (You will use a smaller amount per serving)
150g Fat Free Greek Yogurt (Brand: Milbona)
50g Light Mayo (Brand: Hellmans)
4 Garlic Cloves
Big Handful of Coriander/Cilantro
1/2 tsp Salt & Pepper
1/4 Lemon Juice
Important Cooking Notes
Make sure you season the chicken on both sides. Cook on medium low heat for 3-4 mins each side till you get a good crust
When cooking the rice, toast with the veggies and spices before adding water
Bring the rice to a light bubble then cover and simmer till fully cooked, about 8-10 mins

2 lbs boneless skinless chicken thighs
1-2 lbs large shrimp
1 lime
1 green, red, and yellow bell pepper
2 onions
cooking oil
cilantro (for garnish)
tortillas
(serve with yellow rice and black beans or as a salad)
Marinade:
1/4 cup green onion
1/4 cup cilantro
2 limes (juiced)
1-2 jalapenos
2 tbsps sugar
2 tbps soy sauce
smoked paprika, chipotle chile powder, ancho chile powder, cumin (1/2 tsp each - more to taste)
1/4 cup olive oil
1-2 tbsp garlic paste
salt, pepper, garlic, onion powder
1/4 cup cold water
Blend marinade ingredients together and taste as you go. Adjust flavor to your preference. Marinade chicken for 1-24 hours and shrimp for 30-60 minutes max. Chicken thighs are done at 175 internal temp and shrimp at 145.
