3 lb Chicken, quartered
1/2 c Flour
1 t Salt
1/8 ts Black Pepper
1/4 c Butter or Olive oil
(can be mixed ) 1 md Onion, sliced
1/2 lb Mushrooms, fresh sliced
1 Clove Garlic, minced
12 Olives, ripe whole
4 oz Tomato puree OR
1 c Canned
1/2 c Claret wine or sherry
Dust chicken parts with flour which has been well mixed with salt and peppe. Saute in butter(or olive oil) until golden brown. Add remaining ingredients, cover, and simmer over low heat for 20-30 mins.

Boneless Chicken Cacciatore
2 4 oz boneless skinless chicken breast halves
1/2 teaspoon olive or canola oil
3/4 cup chopped yellow onion
One clove garlic minced
2 14 oz cans low sodium peeled whole tomatoes 1/4 cup water
One teaspoon dry red wine
1/2 teaspoon Italian seasoning
1/2 teaspoon dried parsley flakes
Pinch crushed red pepper flakes pinch ground black pepper
1/2 cup roasted red pepper chopped
Cut chicken breasts halves into four similar size pieces heat a large non stick skillet over medium heat. Add the oil add the onion and sauté until tender and golden about 8 minutes add the chicken and sauté for four minutes add the garlic and sauté for 30 seconds.
Add the tomatoes along with the juice and the water stir in the red wine Italian seasoning parsley crushed red pepper and black pepper reduce heat to medium low and simmer for 20 minutes uncovered stir in the roasted red pepper and simmer for two minutes divide between two plates and serve hot.

We are back with another episode of Cooking with Carassauga. This time we bring you a dish inspired by the country of Italy. We have the infamous Italian Chicken Cacciatore here for you to try out for dinner tonight. Check out the recipe below and let us know how your Italian Chicken Cacciatore turned out.
Italian Chicken Cacciatore
Ingredients
• 4 Chicken Leg Quarters (bone-in, skin on)
• 3 Sweet Peppers
• 1 Onion
• 6 Cloves of Garlic
• 1 Cup of Mushrooms
• 1 Cup of Flour
• 3 Cups of Canned, Diced Tomatoes
• 3-4 tbsp Vegetable Oil
• 1/4 Cup White Wine
• Salt and Pepper
Serves 4 people.
Directions
1. Start by chopping up the vegetables. This is a rustic dish, so a rough chop is ideal.
2. Finely slice the garlic
3. Cut the chicken quarters apart where the thigh meets the drumstick.
4. Season the chicken with some salt and pepper on both sides.
5. Generously flour the chicken pieces, set aside
6. Add 2-3 tbsp of oil to a pan.
7. On high heat, brown the chicken, skin side down.
8. Brown each side for 2 – 2.5 mins per side.
9. Remove chicken and set aside.
10. Using the same oil and pan, sauté the vegetables on medium heat.
11. Add the crushed tomatoes.
12. Raise the heat to high and add the white wine.
13. After 2 to 3 mins, season with salt and pepper.
14. Add the mushrooms and cook for another 1 to 1.5 minutes.
15. Place all the ingredients into a glass tray. Lay the chicken first and top with the vegetable, tomato mix.
16. Cover with aluminum foil and bake at 400 for 45 minutes.
17. Let cook, loosely covered for about 30 minutes.
