NINJA FOODI | EASY PRESSURE COOKER CHICKEN CACCIATORE MY WAY | MY GADGET KITCHEN | #179
Ingredients:
Bone in chicken, thighs and legs
1 bell pepper and 1 onion, sliced
8oz mushrooms, sliced
6 cloves garlic, chopped
14oz can stewed tomatoes
14oz can diced tomatoes
1 tbsp tomato paste
2 bay leaves
2-3 oz black olives
1 can chicken broth
Seasonings to taste:
kosher salt, black pepper, granulated onion, italian seasoning, roasted garlic seasoning, thyme, red pepper flakes
Optional: rosemary infused sea salt from Saltopia ( I ordered from QVC)
Get out of the drive thru and get into the kitchen.

Today in the Kitchen: Chicken Cacciatore
According to the dictionary, cacciatore in Italian means “hunter”. Meat prepared in a rustic style with onions, herbs, tomatoes, and spices. Let’s do this!
Dredge Chicken thighs (4) in 2 c seasoned flour.
Seasonings: 1 t each salt, pepper, paprika, onion and garlic powders
Place on air fryer basket with skin side up. Set at 350 degrees for 20 minutes. At the end of 20 minutes, flip and set another 20 minutes. I stopped mine at 10 just to make sure they weren’t getting too brown.
In the skillet:
Drizzle about 2 T EVOO. Add 2 c chopped onions and 1 c sliced mushrooms, Simmer gently. Season with salt and pepper. I also added a pinch of red pepper flakes to enhance the flavor.
Add a 22 oz can of San Marzano tomatoes. I prefer whole tomatoes so I can determine the size of the tomato pieces. I also added 2 c of organic marinara sauce from ALDI’s. It is delicious. It is well seasoned and keeps the flavor bold.
This is the time to taste for seasoning levels. I added a bit more salt and pepper, as well as garlic powder.
Simmer until the thighs are done. After the pasta is cooked, add about 1 to 2 cups of pasta water to the sauce, continue simmering.
You can decide is you want to submerge your chicken or drizzle the sauce over it on your plate. I’m a submerger????

Slow Cooker Whole Chicken {much better than buying a rotisserie chicken!}

We love making a whole chicken in the slow cooker instead of buying a rotisserie chicken. Use the leftovers for tacos or soup the next day.
RECIPE:
INGREDIENTS:
5 lb. small whole chicken (look for a chicken that is on the smaller size around 4-5 lbs.)
1/2 cup butter
1 lemon (optional)
4 carrots - peeled and halved
1 red onion - peeled and quartered
1/2 tsp. dried thyme
1 tsp. salt
1/2 tsp. paprika
1/4 tsp. garlic powder
1/4 tsp. pepper
SLOW COOKER SIZE: 6-quart or larger
INSTRUCTIONS:
Add the carrots and onion to the bottom of the slow cooker.
Remove the chicken from its packaging. Remove any extra parts or packaging from the inside of the chicken. Drain off any liquid from the inside of the chicken.
Add the chicken on top of the vegetables.
Pour over the melted butter over the chicken.
Cut the lemon in half and squeeze over the chicken.
Sprinkle over the seasonings evenly.
Place the lid on the slow cooker.
Cook on LOW for 7-8 hours. This can vary for each chicken you cook, for they can vary in size. You know the chicken is done cooking when the drumsticks start pulling away from the breasts and the juices run clear. If you are concerned if your chicken is done, use a thermometer. 165° Fahrenheit is the safe temperature for chicken.

Chicken Cacciatore
This is our version of the classic Italian chicken stew. I think the flavor is best when using bone-in chicken, but use boneless if you prefer. It's all done in one pot and needs to simmer for an hour to insure the chicken is nice and tender. Wonderful served over a big platter of pasta!
