Ingredients
10 ounces dry pasta (any kind)
1 pound boneless skinless chicken breast
1 teaspoon Italian seasoning
1 teaspoon paprika
1 teaspoon garlic powder
salt & pepper to taste
2 tablespoons olive oil
1 tablespoon butter
4 cloves garlic minced
1 cup tomatoes diced
2 cups spinach chopped, optional
2 cups heavy cream (or 16 oz)
1/2 cups Parmesan cheese shredded or grated
salt & pepper to taste

Italian Grandma Makes Baked Ziti/Rigatoni (Pasta al Forno)
BAKED ZITI (Pasta al Forno):
Olive Oil
1 small Yellow Onion, chopped
2 cloves Garlic, halved
2 lbs Ground Beef
2 qts Tomato Puree
2 tsp Basil, dried
Salt and Pepper to taste
1 lb Rigatoni Pasta or Ziti or whatever pasta you like
1 cup Sweet Peas, 4 oz. frozen
3 Boiled Eggs
1-2 cups (approx.) Grated Pecorino Romano Cheese
1½ lbs Whole Milk Mozzarella Cheese

Who is this lady?
Gina Petitti was born in 1935 in Faeto, Italy. Her family ran a farm in Italy and she met her husband, Vito, in the same town. In 1970 Gina, Vito, and her 4 children immigrated to America. Gina’s husband passed away in 2012, but she is surrounded by a large family, which includes 9 grandchildren, and lives 5 minutes away from her eldest daughter in New Jersey. Gina spends her time cooking, gardening, and being an active member of her local Church.
Where does Gina get her recipes?
Most of these recipes are from what she learned growing up in Italy, but some of them have evolved over time. She has also learned new recipes from friends and family in America. She is always eager to try new things.
Why is no one helping her in the video?
Grandma Gina doesn’t want help! Usually, it’s because we will slow her down or not do it “her way.” For the videos we only show her, but when the camera cuts we jump in and help form the cookies or prep for the next step.
Why don’t we buy her a new...?
Grandma Gina has a closet and garage full of new gadgets, spoons, forks, pots, etc… but she doesn’t like them because she is used to doing it with her old tools. She has fun getting her hands dirty!
Who is behind the camera?
Her retired son-in-law films, her daughter helps her prep, and she usually has one or two grandkids in the kitchen.
Does Gina read the comments?

How to make Baked Ziti with Italian Sausages recipe
Ingredients:
2 1/2 to 3 Italian Sausages ( tear the meat apart )
1 Box of Ziti Pasta or any tubular pasta ( 1 LB )
1 Jar of Marinara Sauce (24 0Z )
1 Tablespoon Olive Oil
Non-Stick Cooking Spray
4 Garlic Cloves ( Minced )
1/2 of One Small Onion = 1/2 cup chopped onion
1 Container Ricotta Cheese ( 15 OZ ) = only need half
2 Bags of Shredded Mozarella Cheese (16 OZ each ) only need about 1 1/2 bags
1 Block Parmesan Cheese ( 5 OZ ) shredded
1 XL Egg
Salt
Black Pepper
Couple Handfuls of Fresh Basil ( chopped )
For the Meat Seasoning:
1/2 Tablespoon Italian Seasoning
1/4 Teaspoon Garlic Salt
1//8 Teaspoon Black Pepper
Pinch of Red Chili Flakes ( optional
Pre-heat oven to 400 degrees.
Bring a pot of water to boil . Add a round of salt.
Boil the Ziti noodles for 8 minutes and any other tubular noodles for 9 minutes.
Drain.
In a large mixing bowl add the ricotta cheese (7.5 oz ) , 1 1/2 cups shredded mozarella cheese, 1 1/2 cups shredded parmesan cheese, 1 egg , pinch of salt & black pepper, pinch of red chili flakes (optional ), and a handful of chopped fresh basil. Add the cooked noodles and mix together. Set aside.
In a pan over Medium-High heat add the olive oil.
Once the pan is hot add the minced garlic then the chopped onions. Saute until onions are slightly translucent.
Add the Italian Sausages.
Add the meat seasonings, 1/2 tablespoon Italian Seasoning, 1/4 Garlic Salt , 1/8 Black Pepper and Pinch of Red Chili Flakes (optional ).
Stir to combine everything.
Cook until the meat is browned.
Pour in the jar of marinara sauce and bring to a boil.
Cover and reduce the heat to simmer for 10 minutes.
Once the meat sauce is done cooking add 1 cup of the meat sauce to the already cooked pasta and mix.
Coat the bottom of a 9x13 baking dish with a non-stick cooking spray.
Ladle a thin layer of the meat sauce on the bottom of the baking dish.
Transfer the noodles to the baking dish.
Ladle the remainder of the meat sauce over the noodles.
Top with 1 1/2 cups of shredded mozarella cheese and 1 1/2 cups of shredded parmesan cheese.
Add a handful or two of fresh chopped basil.
Cover the baking dish with aluminum foil.
Place the baking dish into the pre-heated oven.
Bake for 20 minutes at 400 degrees.
After 20 minutes remove the aluminum foil.
Turn the heat to Broil and bake uncovered for another 20 minutes.
Let rest for 10 to 15 minutes before serving.

Recipe: Baked ziti with spinach
Baked ziti is an Italian comfort food. The whole family will love it.

Ingredients

Box of ziti pasta (1 lb)
Spinach Mixture
1/4 cup olive oil
6 cups fresh spinach
2 cups tomato sauce, video 042, or other tomato sauce
1 cup ricotta cheese
1/4 cup Parmesan cheese, grated
1/4 tsp salt

Directions
—
Ziti Pasta
Bring a large pot of salted water to a boil.
Cook ziti about 1/2 the time on the box. The ziti will finish cooking in the oven.
Pour a cup of tomato sauce or use our tomato sauce from video 042 into a glass oven-safe baking dish. Place the ziti on top.
Spread the spinach and ricotta mixture evenly over the ziti.
Pour another cup of tomato sauce evenly over the ziti.
Grate Parmesan cheese on top.
Bake in oven at 350 F until cheese is melted and ziti are tender.
Serve with crusty Italian bread.
Spinach mixture
Heat oil in a large sauté pan at medium heat, adding spinach gradually as it starts to wilt.
Sauté spinach until it is all wilted and the liquid cooks off.
Let the spinach cool, then mince.
In a bowl, mix spinach, Parmesan cheese, ricotta cheese and salt.
Cover the ziti with the filling as described in the ziti directions.
