Soul Food Sunday is upon us! We are making buttermilk fried chicken, rum candied yams, smoked turkey tail collard greens, and honey butter cornbread.

READ ME!! Tips:
1. Marinate the chicken first. It can sit while you are cooking/ prepping the other dishes.
2. Then through the collard greens into the instant pot.
3. Next thing to start will be the yams since they can be cooking on a back eye while you cook the other dishes. Also, when they are done they will stay warm on the lowest setting or the residual heat from the dutch oven.
4. Begin to cook the mac and cheese and the cornbread. They will both cook at 375, so get them going at the same time. Put together the mac and cheese. Then place your cast iron skillet in the oven with 2 tbsp vegetable oil. Then put together the cornbread. Stick the mac and cheese and cornbread in the oven at the same time.
5. While they are cooking, begin to bread the chicken and heat your oil. Fry your chicken. If they mac and cornbread are out of the oven, then place the chicken in there to keep warm. Cut the oven off and just let it stay warm in the residual heat. If the oven is too hot, left it cool down to 200 F then place inside.
Fried Chicken
2 lb chicken wings
buttermilk- just enough to cover chicken
1/2 cup hot sauce
1 tsp shrimp and crab boil
1/2 tsp msg
1 tsp pepper
1 tsp poultry magic
1 tsp garlic powder
salt to taste
2 cups self rising flour
1 tbsp chicken bouillon
1/2 tsp each pepper, garlic powder, poultry magic
* These are estimated measurements, always season to taste
Rum Candied Yams
3 lb sweet potatoes
1/2-1 stick butter
1/2 tsp salt
3/4 cup brown sugar
1 tsp vanilla extract
1 1/2 tbsp lemon juice
1/4- 1/2 cup rum
1 tsp cinnamon
1/2 tsp ginger powder
1/2 tsp nutmeg
Spicy Mac and Cheese
8 oz noodles
2 tbsp butter
1 1/2 tbsp flour
16 oz cheese of choice
Vegeta, pepper, and garlic powder to taste
1/2 tsp crushed red pepper flakes
1 1/2 cup half and half, or more to adjust thickness
Turkey Tail Collard Greens
1 1/2 lb collard greens
2 turkey tails
1 piece fat back
1/2 large onion
2 cloves garlic
1 1/2 tsp low sodium chicken bouillon
1/4 tsp creole seasoning
1/2 tsp black pepper
1/2 tsp garlic powder
1/4 tsp crushed red pepper flakes
1 tsp sugar
1 tsp apple cider vinegar
2 cup water
salt and season to taste
Honey Butter Cornbread
2 1/2 cups Martha White buttermilk cornbread mix
2 eggs
1/2 cups brown sugar
1 cup sour cream
2/3 cup milk
2 1/2 tbsp honey
1 stick butter
1/2 tsp salt

Oxtail Ingredients
3 lbs oxtail
2.5 lb beef neck bones
1 1/2 tbsp oxtail seasoning
1 tbsp vegetable seasoning or Mrs. Dash
1 tsp roasted garlic pepper seasoning
1 tsp salt free cajun seasoning
1 tsp white pepper
1 tsp ginger powder
coconut powder (optional)
1 tbsp ketchup
1 1/2 tsp low sodium beef bouillon
thyme
rosemary
5 allspice berries
salt to taste
Pepper jack Mac & Cheese
8 oz noodles cooked in chicken broth
8 z pepper jack cheese ( use a good quality brand)
1 shallot and herb boursin cheese
6-8 oz medium or sharp cheddar cheese
2 tbsp butter
1 tbsp flour
1/4 tsp Vegeta or chicken bouillon
garlic powder
salt
pepper
1/2 sazon packet
1/4-1/2 cup sour cream
1 1/2 cup milk
Bourbon Sweet potatoes
3 lb sweet potatoes cut into 1 1/2 in cubes
5 - 6 tbsp butter ( sometimes I use a whole stick even lol)
1/2 cup brown sugar
1 tbsp maple syrup
1 tsp vanilla
2-4 tbsp bourbon
1/2 tsp lemon extract
pinch salt
2 tsp cinnamon
1/2 tsp ginger
1/4 tsp fresh grated nutmeg
Note: this recipe can also be made without the bourbon and it taste great!
Cabbage
1/2 cabbage
1/2 onion
2 tbsp butter
2 oz cajun sausage
It's Incredible seasoning or all purpose seasoning
Amazing Blazin Cajun Seasoning or salt free cajun seasoning

Healthy SOUL FOOD! HOT HONEY BAKED CHICKEN | GUMBO COLLARD GREENS| MAC N' CHEESE | GREEN BEANS
This soul food Sunday meal can SMACK! But you won't believe how healthy it is! I'm making hot honey baked chicken, gumbo collard greens, mac n' cheese ( with hidden veggies and other swaps), green beans, brown rice, and salad. I suggest eating a small portion of the mac and the brown rice, and filling up on all the veggies and protein. The healthy fats like grass fed butter and organic lard will keep you full, but not give you the itis ????.
Gumbo recipe :
Green Seasoning:
Hot Honey Chicken
3-4 lb chicken
olive oil
1 tsp chicken bouillon, garlic powder, onion powder
1 tbsp green seasoning
1/2 tsp ginger powder
1/2 tsp scotch bonnet pepper powder (cayenne is a good swap)
1 tbsp spicy mango sauce
1/2 tbsp honey
1 tsp paprika
1 tsp chicken seasoning
Garlic, allspice seasoning
Gumbo Collard greens
2 lb collard greens
1 onions
1 bell pepper
2 stalks celery
5 cloves garlic
1/2 tbsp salt free cajun
4 oz chicken andouille sausage
1 lb smoked turkey
fat back or butter
1 tbsp butter
2 tsp better than bouillon
2 tbsp dry roux
1/2-1 tsp gumbo file
2 tsp sugar
1 cup okra
scallions
Creole seasoning
Mac n cheese
8 oz brown rice noodles ( you could use the whole 12 oz box though, just add more evaporated milk to make the sauce looser)
12 oz cauliflower
1 1/2 tsp flour or 1 egg (add egg with the heat off into the final mix)
8 oz organic sharp cheddar cheese
4 oz munster cheese
4 oz gouda

2 tbsp butter
1/2 cup heavy cream
1/2 cup milk
1 can evaporated milk (add a little at a time until desired thickness is achieved)

Ingredients for the bbq sauce:
1 1/4 cups (300g) tomato ketchup
4 tbsp white wine vinegar
5 tbsp dark brown sugar
2 tbsp black treacle or molasses
3 tbsp honey
2 tbsp vegetable oil
1 tbsp Worcestershire sauce
1/2 tsp mustard powder - or 1 tsp English mustard
1 ½ tsp smoked paprika
1/2 tsp black pepper - freshly ground

You won't believe this incredible Thanksgiving meal for only $55!! We are making a chicken with cornbread sausage stuffing, mac and cheese, mustard greens, sweet potato pie from scratch, honey butter rolls, and gravy!
Of course food prices vary depending on your area, but I encourage you to shop for deals and buy in bulk if you can. Essentials like butter cost alot less in bulk if you can afford it. I am going to also assume you already have some staples like oil, spices, vanilla extract, flour, and sugar already at your house; most likely you will also have onion and garlic too. The seasonings are flexible so you can use whatever you already have in your house so you don't have to buy anything new. At minimum I would suggest having salt, pepper, garlic powder, onion powder, chicken bouillon, and Creole seasoning.
Making the rolls, pie crust, and dressing from scratch saves money overall plus taste better. I did my pricing based on the cost of using the amount of each ingredient I used in the recipe.
I saw this concept on @MeshasCorner ! She did a great job with her video! Of course I did my own recipes and put my own spin on things.

1 cornbread recipe
1 lb sausage (i used spicy)
1 onion
red bell pepper
2 ribs celery
4 cloves garlic
2 tsp chicken seasoning
1 tsp chicken bouillon
1 tsp poultry seasoning
salt/pepper to taste
sage, thyme, rosemary
2 tbsp butter
1 cup low sodium chicken broth (add before stuffing chicken)
*season to taste!
Mac and Cheese
1 lb noodles
1 tbsp chicken bouillon
salt
3 cup half and half
1/2-1 cup cup sour cream
4 tbsp butter
3 tbsp flour
2 lb sharp cheddar ( add more cheese if you like)
1/2 lb mozzarella cheese

Note: typically I would use heavy cream and evaporated milk in my mac, but that is more expensive. if you can afford heavy cream I would use 2 cups and 1 cup evaporated milk.
Honey Butter Rolls
1/3 cup very warm water
1 envelope active dry yeast, 2 1/4 tsp
4 Tablespoons Sugar
2 tbsp honey ( or just add more sugar)
1 1/3 cups warm whole milk
1 large egg, slightly beaten (room temperature)
1 1/2 tsp salt
4 tablespoons butter, melted ( poured in batter)
3 tbsp butter, brushed into rolls and poured on top
4 cups all-purpose flour, will need more for board
top with 1 tbsp honey 1 tbsp butter
Sweet Potato Pie Crust
2 and 1/2 cups (313g) all-purpose flour
*plus more as needed for shaping and rolling
1 teaspoon salt
6 Tablespoons unsalted butter, chilled and cubed
2/3 cup vegetable shortening, chilled
1/2 cup ice water
1 tbsp sugar
2 lb roasted sweet potatoes ( about 4-5 large)
1 stick butter
1 cup heavy cream, half n half , or evaporated milk
2 tsp cinnamon
1 tsp nutmeg
1/2 tsp ground ginger
1 1/2 tbsp vanilla
1 tbsp lemon juice
1 cup brown sugar
1 cup sugar
4 eggs
1/2 tsp salt
* adjust sugar and spices to taste.
Mustard Greens
2 bundles mustard greens
1/4 lb bacon ( can omit and just use fat back to save more)
1/2 onion
2 cloves garlic
2 cups water
1 1/2 tsp chickn bouillon
1/4 tsp creole seasoning
