Professional chef instructor Frank Proto and home cook extraordinaire Emily are trading Fettuccine Alfredo recipes and hitting the kitchen for a cheesy showdown. We sent Emily an eye-popping $1,425 worth of supplies - everything she’d need to make Frank's decadent recipe, cheese wheel and all. Meanwhile, a modest $13 worth of ingredients was sent back the other way for Frank to finesse into something elevated in his style. Food scientist Rose dialed in to assist our dear Emily with a few questions she had along the way. Which Fettuccine Alfredo has you saying Molto bene?

How to Make Healthy Pasta with Chicken on top
Flavourful, quick and easy to prepare pasta with chicken is a classic food when you're Italian food and carbs. This recipe is PERFECT for those looking stay healthy or on a weight loss journey. Also best for kids who don’t like eating vegetables, however with this dish they won’t even notice! Adding vegetable and eating pasta isn’t always a bad thing. PREPARATION: 5 minutes
COOKING TIME: 35 minutes
INGREDIENTS:

•Fresh Spinach
•Chicken breasts
•Linguine or Spaghetti
•Mushrooms
•Canola oil
•Feta cheese - 200grams = 1 cup (I recommend low-salt or traditional light feta)
NOTE: not all feta cheeses melt or taste the same. I recommend asking your local grocery store which one melts and tastes better

Seasonings:
•Paprika
•Chilli powder
•Black pepper
• Onion powder
• Garlic powder
• Chilli flakes
• Rosemary
• Thyme
• Italian blend

INSTRUCTIONS: *PREHEAT ON 375*
Step 1) Grab a wide and tall baking dish and place the whole bag of spinach in the dish pan
Step 2) Place chopped mushrooms on top of the spinach and add 2 tablespoons of paprika (3 if you like your food well seasoned)
Step 3) Add 2 tablespoons of thyme (3 if you like your food well seasoned) and then add 2 tablespoons of onion powder
Step 4) Add 2 tablespoons of Rosemary (3 for more flavour if you desire) and then add 2 tablespoons of Italian seasoning
Step 5) Add 3 tablespoons of garlic powder
Step 6) Pour oil on top (doesn’t matter what kind) I measured by pouring oil into the cap. I poured it in the cap twice. Then use your hands to blend in the mixture! Make sure it’s well mixed before proceeding
Step 7) Add in feta block - 200g of feta (which is equivalent to 1 cup)
*OPTIONAL* - add as much or little chilli flakes as you desire
Step 8) Bake for 40 minutes at 375 and then broil for 5mins
Step 9) Time to season your chicken until the angels sing. Pour 1 TEASPOON of oil on each side of your chicken and season it with paprika, thyme, onion powder, garlic powder
Step 10) Let your chicken breasts marinate. Meanwhile, cook your pasta
Step 11) Heat up frying pan with 2 tablespoons of oil. Let it heat up on medium heat
Step 12) When your pasta is half way done and the frying pan and oil is hot, place your chicken in the pan and let it fry for 4 minutes on BOTH SIDES
Step 13) Once your chicken breasts are done cooking let them rest for 3 minutes
Step 14) Drain water from the linguine/spaghetti and add a small amount of butter to the noodles in order to prevent them from sticking together. Then take out feta mixture from the oven when the cooking time is completed
Step 15) Mix up the spinach feta mixture until it’s blended as much as possible And then add your linguine/spaghetti into your feta base and mix it all together
Plate a portion of your feta pasta and top it with your beautiful chicken and enjoy! :)

Easy One Pot Chicken Pasta Primavera Alfredo Recipe
This easy dinner recipe is a one-pot meal combining pasta, chicken and vegetables in an Alfredo primavera sauce. It's ideal for busy moms, college students and anyone who wants to make an easy, tasty, hearty dinner with fresh ingredients. It takes about 20 minutes and you can use ziti, fettucine or any pasta and dish out something so delicious, your family and friends won't believe it. All in one pot.
Makes 4-6 servings
1/2 pound penne pasta (uncooked)
2 boneless, skinless chicken breasts cut into 1/2 inch cubes
1/2 stick of butter
2 tablespoons extra-virgin olive oil
Salt (big sprinkle)
Black pepper (big sprinkle)
1 tablespoon Italian Seasoning
1/2 small onion, thinly sliced
4 cloves of garlic, chopped
Sprinkle of red pepper flakes (optional)
2 and 1/2 cups chicken stock
1 cup heavy whipping cream
1 cup grated Parmesan cheese, plus extra for topping when serving
Optional garnish of fresh chopped basil
Vegetable Add-Ins
You can choose to add all or one or none of these vegetables. Get creative and add what you like.
1 cup cherry or grape tomatoes, halved or quartered if large
1 cup fresh baby spinach
1 cup of frozen peas
1 cups fresh or frozen broccoli florets
1 cup of fresh sliced mushrooms. (If using mushrooms, add them in when you are sautéing the onions)
In a Dutch oven, Creuset or deep skillet, melt the butter over medium-high heat, add olive oil and brown chicken, about 2 minutes, until the chicken is brown but not cooked through. Add onions, garlic and sauté until fragrant, being sure not to burn the garlic and onions. Add chicken stock, cream and uncooked pasta to the pan; stir to combine. Bring to a boil, then cover and reduce to a simmer. Simmer, covered, for 15-20 minutes or until pasta is tender. Stir in grated Parmesan cheese and add basil. Season with salt and pepper to taste. Remove from heat and let sit for about 5-10 minutes to allow cream to set.
Plate pasta and serve with extra grated cheese, red pepper and basil.
