How To make Cherry Spice Cake
16 oz (1)cn waterpacked cherries
-sour 1/2 c Sweet milk (recipe below)
1/2 c Packed dates
1/4 c Light oil
2 lg Eggs, separated
3/4 c Unsweetened applesauce
1 3/4 c Whole wheat flour
2 tb Lowfat soy flour
2 tb Nonfat dry milk powder
1 tb Cinnamon
1 tb Baking powder
1 ts Baking soda
1/2 ts Cloves
1/2 ts Nutmeg
1/4 ts Salt
1. Prepare an 8 inch square cake pan. Oil & flour. 2. Preheat oven to
350 F. 3. Drain waterpacked cherries. 4. After cherries have drained
will, measure 1 cup of them and set aside. 5. In blender puree together 1/2 cup sweet milk with 1/2 cup packed dates. 6. Blend oil, egg yolks and applesauce. Set aside next to cherries. 7. In a small bowl beat 2 egg whites until stiff and set aside. 8. In a large bowl combine flours, dry milk, baking powder, baking soda, salt and spices. Stir well. 9. Gradually mix blended liquid ingredients into dry ingredients until well moistened. 10. Gently stir in cherries. 11. Then fold in the egg whites just until combined. 12 Pour batter
into the prepared cake pan and bake at 350 F for 50 minutes. 13. Cool cake to room temperature. 14. Refrigerate covered. < could be used served as cupcakes> Yield Variation: Substitute 1 cup fresh sliced strawberries for cherries.

This is a recipe for a Tomato Spice Cake. Also known as a Tomato Soup Cake, a Mystery Cake, or a Surprise Cake. Of course, the mystery of surprise refers to the addition of a can of tomato soup to the cake batter. This cake was first made with canned tomatoes and was considered a cake you made in the winter. Later the recipe changed from using canned tomatoes to a can of tomato soup. I know it sounds a little weird, adding tomato soup to a cake batter. But when you think about it, it isn't so weird as tomatoes are a fruit and they are juicy sweet. While not absolutely necessary, I like to cover the top of the cake with a cream cheese frosting, as its tanginess pairs perfectly with the sweet and spicy flavor of the cake.

1932 Yorkshire Spice Cake Recipe
Welcome Friends! Welcome to Sunday morning in our old cook book series. We're going to do yet another recipe out of this Five Roses Flour Cookbook, and this time around we're going to do something called a Yorkshire Spice Cake. It's in the Christmas cake section, and I have never come across this cake before, so I'm interested to find out how it works out. One of the interesting things about this Yorkshire spice cake is that it only has one spice in it, and that is nutmeg, so it'll be interesting to see what the flavour is with only one spice.
Ingredients:
3½ cups flour
4 tsp baking powder
½ tsp salt
¼ - 3/4 nutmeg grated
3 cups currants
1 cup raisins
¾ cup mixed chopped peel
¾ cup shortening (pure Lard)
1½ cup brown sugar
3 eggs
1 cup sweet milk
Method:
Preheat oven to 325ºF
Cream the lard until light and fluffy, then cream in the brown sugar.
In a bowl mix the currants, raisins and a couple tablespoons of the flour.
In another bowl mix together the dry ingredients; flour, salt, baking powder, nutmeg.
Mix the eggs into the creamed sugar and lard, one at a time.
Slowly alternate adding the flour mixture and the milk to the creamed lard, sugar and eggs.
Mix in the currants and raisins.
Scrape half the batter into a 9x9” pan lined with parchment.
Spread half the candied peel on top.
Spread the remainder of the batter in the pan and top with the remaining peel.
Bake for just over 1 hour or until a tester comes out clean - there is a real risk of over baking and ending up with a dry cake.
