How To make Cheesy Mushroom Canapes
2 tb Butter
4 oz Mushrooms, coarsely chopped
4 ts All-purpose flour
2 c Shredded cheddar cheese
1 ts Mustard powder
1 ts Worcestershire sauce
Fresh ground pepper to taste 8 Slices French bread (3/4")
2 tb Chopped fresh parsley
Paprika Fresh parsley sprigs (opt) In a saucepan, melt butter. Add mushrooms and cook gently 2 minutes. Add flour and stir into mushroom mixture. Add cheese, mustard and Worcestershire sauce. Stir well and heat through gently 2 minutes or until mixture begins to melt. Remove from heat and season to taste with pepper. Preheat broiler. Toast bread on one side only. Spread cheese and mushroom mixture on untoasted sides. Broil in preheated broiler 3-4 minutes or until melted and bubbling. Cut slices in half and sprinkle liberally with parsley and paprika. Garnish with parsley sprigs, if desired, and serve hot.

Mushroom Spinach Canapes - Fusion Recipes #3 | SG World of Cooking
Canapes filled with cheesy mushrooms and spinach...
Ingredients:
Olive Oil – 1 tbsp
Garlic, finely chopped – 1 tsp
Mushrooms, finely chopped – 1 cup
Spinach, finely chopped – 1 cup
Salt – ½ tsp
Black Pepper – ½ tsp
Chili flakes – ¼ tsp
Oregano – ¼ tsp
Parsley – ¼ tsp
Thyme – ¼ tsp
Mozzarella Cheese – 2 tbsp
Mayonnaise – 1 tbsp
Canapes – 8-10
Cheese slice, Red Bell Pepper – for garnish
Method:
1. Heat olive oil in a pan and add garlic. Saute for 30 seconds and add mushrooms. After a minute, add spinach and cook till all water oozed out by the veggies is dried up.
2. Add the salt, black pepper and herbs and mix.
3. Add cheese and cook till it melts.
4. Take the mixture out in a bowl and let it cool.
5. Add mayonnaise and mix nicely.
6. Deep fry the canapes till golden.
7. Add the filling to the canapes. Garnish with cheese slice and red bell pepper and serve.

INGREDIENTSOil - for frying
Canapes - 12 pieces
Butter - 1 tablespoon
Onions - 85 grams
Mushrooms - 210 grams
Salt - 1 teaspoon
Oregano - 1/4 teaspoon
Thyme - 1/4 teaspoon
Fresh cream - 80 grams
Coriander - for garnishing
PREPARATION
1. Heat sufficient oil in a heavy skillet, add the canapés in it and fry until it turns golden brown in color.
2. Remove it from heat and drain it on an absorbent paper. Keep aside.
3. Heat 1 tablespoon oil in a skillet, add 85 grams onions and fry till translucent or until it turns golden brown in color.
4. Then, add 210 grams mushrooms and mix it well.
5. Cook for 8 - 10 minutes on medium heat.
6. Add 1 teaspoon salt, 1/4 teaspoon oregano, 1/4 teaspoon thyme and mix it well.
7. Now, add 80 grams fresh cream and mix it well.
8. Cook for another 5 - 7 minutes on medium heat.
9. Remove it from heat
10. Fill the fried canapés with prepared mushrooms stuffing.
11. Garnish with coriander.
12. Serve.
