How To make Cheesy Mushroom Canapes
2 tb Butter
4 oz Mushrooms, coarsely chopped
4 ts All-purpose flour
2 c Shredded cheddar cheese
1 ts Mustard powder
1 ts Worcestershire sauce
Fresh ground pepper to taste 8 Slices French bread (3/4")
2 tb Chopped fresh parsley
Paprika Fresh parsley sprigs (opt) In a saucepan, melt butter. Add mushrooms and cook gently 2 minutes. Add flour and stir into mushroom mixture. Add cheese, mustard and Worcestershire sauce. Stir well and heat through gently 2 minutes or until mixture begins to melt. Remove from heat and season to taste with pepper. Preheat broiler. Toast bread on one side only. Spread cheese and mushroom mixture on untoasted sides. Broil in preheated broiler 3-4 minutes or until melted and bubbling. Cut slices in half and sprinkle liberally with parsley and paprika. Garnish with parsley sprigs, if desired, and serve hot.

Mushroom Canapes - Russian Recipes #1 | SG World of Cooking
Ingredients:
Mushrooms, finely chopped - 2 cups
Butter - 2 tbsp
Salt - 1/2 tsp
Black Pepper - 1/2 tsp
Mayonnaise - 2 tbsp
Garlic, minced - 1 tbsp
Instructions:
1. Add butter to a pan and add mushrooms. Cook till all water oozed by mushrooms dries up (approx 7-8 minutes).
2. Add salt & remove in a bowl to cool.
3. Once cooled, add mayonnaise, garlic and black pepper. Mix well.
4. Toast some bread slices and apply a layer of mushroom mixture on them.
5. Enjoy!!!
Portobello Mushroom Caprese
This is a favorite in the kitchen. It's easy to make, aromatic, and surprisingly light. An ideal dish for vegetarians or when you're ready for a meat break.

Recipe below:
Preheat oven to 400°F.
1. In a saucepan combine 1/2 stick of butter, 3 minced garlic cloves, salt and pepper to taste (usually just a pinch). Using medium low heat, cook down the butter and garlic until fragrant, about 3-4 minutes.
2. Remove the stems from the mushrooms and brush each side with the garlic butter sauce.
3. Halve about 10-12 grape tomatoes, halve 8 oz of buffalo mozzarella and julienne about 10 basil leaves. Set aside a pinch or two of basil for garnish.
4. Divide the tomatoes, cheese, and basil equally between the mushrooms. Cook in oven for about 10-12 minutes or until tender.
5. Wipe down your saucepan, add 1/4 cup balsamic vinegar and 2 teaspoons of brown sugar on medium low heat. Let it reduce until it's a syrup consistency, about 4-5 minutes. Once reduced, remove from heat.
Remove mushrooms from oven and drizzle the balsamic over the top (add your extra basil atop for a garnish if you'd like). Serve immediately.

An ultra-cheesy and creamy bruschetta with mushrooms make for the perfect appetizer.
CHEESY MUSHROOM BRUSCHETTA
Ingredients
1 cheese slice
10-15 button mushrooms
2 brun pavs
¼ cup + 2 tbsps soft butter
1 tbsp chopped fresh parsley leaves
2 tbsps finely chopped garlic
Salt to taste
½ tsp red chilli flakes
1 tbsp refined flour (maida)
¾ cup milk
Crushed black peppercorns to taste
Fresh parsley sprig for garnish
Method
1. Preheat the oven at 180ºC.
2. Thickly slice the brun pavs.
3. Chop button mushrooms.
4. Take ¼ cup butter in a bowl, add parsley, 1 tbsp garlic, a pinch of salt and red chilli flakes and mix till well combined.
5. Apply some butter mixture on one side of the brun pav slices. Place them on a baking tray and bake in the preheated oven for 5-6 minutes.
6. Meanwhile, to make the stuffing, heat remaining butter in a non-stick pan. Add remaining garlic and sauté for 1 minute.
7. Add the chopped mushrooms and sauté for 3-4 minutes. Add refined flour and sauté for 1 minute.
8. Add milk and mix well. Cook till the mixture thickens.
9. Add salt and crushed black peppercorns and mix well. Cook for a minute.
10. Add cheese slice and mix well. Cook till the cheese melts and allow to cool slightly.
11. Remove the baking tray out of the oven, place a portion of the mushroom mixture on each brun pav slice.
12. Garnish with parsley sprig and serve immediately.
