Hi Claudia: Here is a compliation of some "research" I did. I had to - 'cause I hate to tell you this - but; I get a perfect cheesecake every time, so other than the corn starch I was stumped. Here are some things I came across:
1. Wrapping the pan with foil keeps it watertight.
2. If you grease the sides of the pan first, the surface will not crack when the cake starts to shrink on cooling. (It always shrinks a little).
3. Chill thoroughly before unmolding. In fact, I make my cheesecakes one day ahead of serving and leave it in the springform till I'm ready to use.
4. The water bath pan must NOT be higher than the springform pan or it will slow down baking. Also, put no more than 1" of water in pan.
5. Check oven temperature for accuracy.
6. When done, turn oven off, DO NOT OPEN DOOR, let sit for one hour. Then remove, place on a rack, and let cool to room temperature (about 1 hour). Cover with plastic wrap and refrigerate overnight.
7. Use 1 Tbl cornstarch per 2 (8 oz) packages of cream cheese. Use Philadelphia brand cream cheese. It is the best and works EVERY time.
8. IMPORTANT: Use the egg size specified. If none is specified, use large (not jumbo or extra-large).

Classic Cheesecake Recipe | Light and Creamy Cheesecake
Classic cheesecake is probably one of the most popular desserts in the world. Some people like it, some people don't. For some reason many people think it's difficult to make a good cheesecake at home, but this is not true. With this easy recipe will master the best creamy cheesecake of your life. This cheesecake is light, creamy with flat surface.

For the crust:
250g Digestive biscuits/crackers
90g Butter, melted
For the cheesecake:
4 cups (900g) Cream cheese
1 cup (200g) Sugar
1/4 cup (60ml) Heavy cream
1-2 teaspoons Vanilla extract
4 Eggs, large
1 cup (225g) Sour cream
1 1/2 tablespoons Cornstarch
Lemon zest
Pinch Salt
For topping:
Fresh berries
Strawberry jam
Directions:
1. Make the crust: Preheat oven to 325°F (160°C).
2. In a food processor or Ziploc bag crush cookies into fine crumbs. Add melted butter and pulse until combined. Press into bottom of 9-inch (23cm) springform pan. Bake for 7-8 minutes. Set aside while making the filling.
3. Reduce oven heat to 300°F (150°C).
4. Make the filling: In a large bowl beat cream cheese and sugar until smooth. Add eggs, one at the time, beating to combine after each addition. Do not over beat. Add vanilla extract, sour cream, heavy cream, salt and beat until smooth. Add cornstarch and lemon zest, beat until incorporated. Do not over beat.
5. Bake the cheesecake: Place the pan on a large piece of foil, and fold the foil up the sides of the pan. Pour the filling over the crust, place the pan inside a roasting pan. Fill the roasting pan with enough hot water to go halfway up the sides of the springform pan. Bake for 45-50 minutes or until the edge is set but the center jiggles slightly. Turn off the heat and leave it another hour in the oven. Let cool to room temperature for one hour, then refrigerate for at least 4 hours or overnight.
6. Decorate the cake with fresh fruits.
No Bake Cheesecake

How to bake the perfect cheesecake crust

Who doesn't love cheesecake and to me one of the best things about cheesecake is the crust so I decided to devote an entire video on how to get a super tall crust which will make your cheesecake picture perfect

Enough for a 6-7-inch in diameter spring form pan (and 3 inch tall)
Ingredients
190g Digestive biscuits/graham crackers
1/2 cup (114g) unsalted butter (you can use 100g and that works too)
A pinch of salt

Ingredients
650g Cream cheese
300g Sour cream
400g Heavy cream
3Tbsp Corn starch
1Tbsp Flour
1Tbsp Vanilla
4 Eggs
1.5Cups White Sugar
8 Springpan 35-47 minutes 420f
9 Springpan 37-45 minutes 420f
In a bowl with a hand mixer, Combine cream cheese, sour cream and heavy cream until smooth. Add vanilla and sift in flour and corn starch Mix again.
With an immersion blender Beat eggs and sugar until fluffy.
Fold in egg mixture into the cheese mixture until smooth.
Then grease your pan with oil and add parchment paper. Pour your batter into the pan and bake as indicated or until deep golden brown and slightly jiggly.
Remove from the oven let and let cool completely before putting in the fridge overnight.
Serve with sauce or other toppings.

For best results bake your cheesecake in a water-bath. But remember to wrap your tin in tin foil to keep any liquid from getting into your spring form pan. Try to use a dish that only just fits your cake tin inside - too much water will create too much steam and so your cheesecake will become very moist and will crack. If you can't use a water bath then add a small tin/oven proof dish to the bottom of your oven with an inch of boiled water in it to create steam and humidity.
