Making pão de queijo | Brazilian cheese bread recipe | Epcot Food and Wine Festival
Nick and Angela make their favorite Brazilian snack - pão de queijo!
Ingredients:
(makes 12 rolls)
1 cup tapioca flour
1/3 cup milk
1 tbs ghee*
1 tbs olive oil*
1 oz grated mozzarella
1 oz grated cheddar
1 oz grated parmesan
1 egg, beaten
*You can use 2 tbs of olive oil if you do not want to use ghee, but we highly recommend using ghee
Directions:
Preheat oven to 400F
In a large bowl, measure out 1 cup of tapioca flour. Set aside.
In a saucepan, bring milk, ghee, and olive oil to a simmer. Once it starts simmering, immediately transfer to the tapioca flour. Stir. Allow to cool (about 5 to 10 min).
Once the mixture has cooled, stir in the cheeses. Then add the beaten egg. Bring together to form a dough.
Shape the dough balls either using your hands or an ice cream scoop.
Bake for 20 min, or until the tops are lightly golden and the bottoms are brown.
Serve warm.
Enjoy!
