INGREDIENTS for dough
1 cup (235mL) light almond milk 2 Tbsp light butter
1 packet (2 tsp, 7g) rapid rise yeast
3 3⁄4 cups (450g) whole wheat pastry flour
1⁄4 cup stevia/granulated sweetener
1 tsp cinnamon
1⁄2 tsp pumpkin pie spice (or sub 1⁄4 tsp
cinnamon, & pinch of nutmeg, ginger &
ground cloves) 1⁄2 tsp salt
1 egg
1⁄3 cup (75g) canned pumpkin pureé
INGREDIENTS for coating
1 Tbsp light butter, melted 3 Tbsp light almond milk 2 tsp cinnamon
2 tsp pumpkin pie spice
2 Tbsp raw sugar
2 Tbsp stevia/granulated sweetener
PROCEDURE
• Heat almond milk and 2 Tbsp light butter over medium low heat. Whisk well. Once combined, remove from heat and allow to cool slightly.
• In a the bowl of a stand mixer, combine yeast, 3 cups (360g) of flour, 1⁄4 cup (6g) stevia, salt, and spices for dough. Stir.
• In a separate bowl, whisk together canned pumpkin and egg.
• In the stand mixer bowl with a dough hook attachment, add egg/pumpkin mixture and luke warm
milk. Beat on medium-low speed.
• Add remaining flour a little at a time (about 1 Tbsp or so) until dough forms a ball and pulls from the sides.
• Beat 5 minutes on medium-low speed.
• Cover the bowl of the stand mixer with plastic wrap and allow to rise for 20 minutes.
• While the dough rises, set aside coating: one bowl with mixed milk/melted butter, and one bowl with mixed spices/sugar.
• After dough has risen, transfer to a floured surface and turn out the dough and begin kneading . Fold over the dough a few times, and then make a log shape.
• Cut log into six even pieces. Keep one of the pieces out and keep the rest under plastic wrap to prevent drying.
• Divide the piece of dough into 8 smaller pieces and roll each piece into a one-inch ball.
• Dip each dough ball into the butter/milk mixture and then the sugar/spice mixture. Transfer to a sprayed bundt pan, layering the dough balls around the entire pan and then on top of each other.
Cover with plastic wrap along the way to prevent drying.
• Repeat for the other 5 larger pieces of dough until you have 48 balls of dough in the bundt pan.
• Cover with plastic wrap and allow dough to rise once more for 25 minutes.
• Preheat oven to 325°F (170°C).
• Uncover the pan, and brush with a little extra butter/milk mixture on top.
• Bake for 8–12 minutes, until risen and slightly browned on top! These are best slightly undercooked, so if you’re unsure, just take them out!
• Allow to cool for 5 minutes before flipping onto a plate and decorating with your icing of choice! (I use 1⁄3 cup (40g) powdered sugar, 2 Tbsp cream cheese, 1 Tbsp almond milk, 1⁄4 tsp vanilla).

Savory Monkey Bread
Maria shares her whole-grain, Gruyère cheese and sautéed onion recipe for monkey bread. Flavored with a mix of aromatic herbs, this savory version is incredible served warm from the oven but it's also great as the base for a delicious stuffing. All you need is a bit of time and patience to let the dough rise a few of times and to roll 64 pieces of dough into paws. Put on some tunes, share the rolling task, and you'll agree it's well worth the effort.
pizza monkey bread
30.6 ounces refrigerated biscuits cut into eight pieces each; three (10.2 ounce cans )
5 ounces pepperoni cut into quarters
8 ounces mozzarella cheese sticks cut into small pieces
¼ cup unsalted butter melted
2 tablespoons olive oil
2 teaspoons Italian seasoning
1 teaspoon garlic powder
Instructions
Preheat the oven to 350°F, and grease a Bundt pan. Set aside.
In a large bowl, combine the biscuit pieces, pepperoni, mozzarella cheese, melted butter, olive oil, Italian seasoning, and garlic powder.

Transfer the ingredients to the Bundt pan, and bake for 35 to 40 minutes. If the biscuits begin to brown too quickly, cover the pan loosely with foil. Bake until the biscuits are golden brown and set in the center.
Allow the monkey bread to cool for 5 to 10 minutes in the pan, then take a knife and gently loosen the sides. Place a serving plate over the top of the pan, and invert it to remove the bread.

HOW TO MAKE PULL APART GORILLA BREAD: Easy Recipe Like Monkey Bread with Cream Cheese in the Middle
You may be wondering what Gorilla Bread is, so let me start by saying it's just like Monkey Bread, but with cream cheese in the middle. I also like to drizzle a little icing on top. Either way, it's delicious and so easy to make. Read on for the recipe.
Gorilla Bread
1 cup of sugar
1 Tbsp cinnamon
1/2 cup or 1 stick of butter
1 cup packed brown sugar
1 8oz. package of cream cheese, cut into small cubes
2 cans of refrigerated biscuits (10 count smaller biscuits)
1 1/2 cups of coarsely chopped walnuts or pecans
For Glaze:
1 cup of powdered sugar
1/8 of a cup of milk
1/4 - 1/2 tsp orange extract
Grease bundt pan with cooking spray and preheat oven to 350º
Mix cinnamon and sugar together and set aside.
In saucepan melt butter and brown sugar over low heat, stirring frequently. When melted set aside.
Flatten biscuits one at a time, sprinkle with cinnamon sugar, place cube of cream cheese on top, and wrap dough completely around it.
Sprinkle half a cup of chopped nuts into pan. Place half of the prepared biscuits in pan. Sprinkle with cinnamon sugar. Pour half of the brown sugar and butter mixture over biscuits. Sprinkle another half cup of nuts on top and continue with next layer with remaining biscuits, followed by cinnamon sugar, brown sugar mixture and remaining nuts. Bake for 30-35 minutes.
Once out of the oven, let cool for 5 minutes and then carefully invert it onto serving dish.
For glaze, combine powdered sugar, milk, and orange extract using wire whisk. Drizzle over gorilla bread and enjoy while they're still warm.
