Ingredients :
For the dough :
1 Tbsp Sugar
1Tbsp yeast
257g Warm Milk
1/2 Tbsp Thyme
64g Olive oil or vegetable oil
Tsp Salt
420g Flour
For the Tuna cheese Filling
2 cube cheese
8 Tbsp Edam Cheese
9 Tbsp Mozzarilla Cheese
2 Tuna
2 Tbsp Thyme
1 Tbsp Chopped parsley

1) Hot cross buns
INGREDIENTS 625g Plain Flour 275ml Milk 80g Caster Sugar 1 tsp Salt 2 tsp Ground Mixed Spice 1½ tsp dry yeast 1 Egg 3 oz Mixed Dried Fruit For the Crosses: 6 tbsp Flour 1/2 cup water For the Glaze: 2 tbsp Honey White icing METHOD
Pour milk into mug. Add yeast and a tbsp of sugar, mix.In a large bowl, add the flour, caster sugar, salt, egg, ground mixed spice, mix until well combined.
Pour in the both mugs and combine all the ingredients. Let it rise for 1 hour.
Add dried fruit in the dough.
Divide dough into 15 - 18 pieces. Roll them into balls.
Place in a baking form lined with parchment paper and cover with a kitchen towel. Let rise for 1 hour.
Make crosses with flour and water mixture.
Bake at 400° F for 15 minutes.
Brush the buns with honey, make crosses with icing sugar.

2) Snowflake rolls (Fiocchi di neve)
INGREDIENTS for the dough: 300ml milk 500g flour 50g butter 15g fresh yeast 70g sugar 5g salt for the cream: 170g ricotta cheese 30g powdered sugar 150ml whipped cream lemon zest for the milk cream: 200ml milk 40g sugar 30g corn starch a teaspoon of honey METHOD 1. Dissolve the fresh yeast in the warm milk. Gradually add the flour, sugar and salt. Let the dough rise for 2 hours. 2. Divide the dough into 25g balls and bake them at 180°C for 15/17 minutes. Brush the tops with milk and then cover them with a tea-towel so that the steam makes them even softer. 3. In the meantime, prepare the milk cream by combining milk, sugar, honey, and cornstarch in a pan. Let it cook until it becomes a dense cream. Let it cool. 4. Mix together the milk cream and the ricotta cream (made by mixing the ricotta with sugar, lemon zest and whipped cream). 5. Make a hole in each roll and fill them with cream. 6. Dust with powdered sugar and refrigerate them for at least 30 minutes before serving.

3) Milk buns
INGREDIENTS • 100ml milk • 20g flour For the dough: • 160ml warm milk • 2 tbsp sugar • 7g dry baker's yeast • 350g flour • 1 tsp salt • 1 egg • 25g butter To grease the rolls: • 1 egg For filling: • 4 tbsp Brown sugar • 1 tsp cinnamon • 50g butter METHOD
Mix milk and flour. Brew. Pour milk, yeast, sugar into a bowl and let rise.
Pour flour, salt, egg, dough and sourdough into another bowl. Knead.
Add butter. Knead. Let rise for 1.5 hours.
Divide the dough into 8 parts. Roll out each part in a circle, grease with butter, sprinkle with a mixture of brown sugar and cinnamon.
Form a roll.
Put the buns on a baking sheet and let rise for 40 minutes. Grease with an egg.
Bake for 20 minutes at 190°C/375°F.

Brioche is a French bread enriched with eggs and butter. It is often broken down into three types, poor man's, middle class and rich man's brioche, depending on the ingredients. This recipe is certainly rich man's brioche and why not, we all deserve a treat every now and again. This bread is rich, velvety and almost flaky. It is a bread with the richness of pastry.
The great thing about this recipe is that the dough can be made in advance, many feel that it is better when its been given overnight in a fridge. The dough will keep very well for 2-3 days.
Chocolate and orange mini brioche rolls
To fill each mini brioche roll you will require chocolate ganache. It is very easy to make but if you do not have time a spoonful of Nutella inside each brioche roll works great also.
