Champagne Jam: if you have leftover champagne make this amazing Gelée au Champagne. It will go perfectly with your foie gras or fancy cheese boards!
Hello everybody!
We wish you all a Happy New Year 2022, filled with more magic than ever before!
Our recipe for today is Sparkling bright like a glass of champagne:
Champagne Jam / Jelly or Champagne - Gelée au Champagne.
If you have left over champagne and you usually throw it away, don’t! We had some sitting on the table for 2 weeks and it was still good for making this amazing recipe!
Ingredients:
⁃ 850 ml of champagne (feel free to use left overs, we used two kinds of champagne, one of them was a leftover from New Year’s and the other one was even older)
⁃ 850 g of special sugar for confiture (jam sugar (UK), gelling sugar(US) - basically sugar with pectin. You can also use normal sugar plus liquid pectin or Gelfix from Dr. Oetker. Our sugar was a french brand Confisuc - Saint Louis, with 98.5% sugar, citric acid and fruit pectin)
⁃ optional: edible gold flakes, vanilla, spices, etc. (we opted for the simple version here, but gold flakes are on the wishlist).
The ratio for sugar/champagne it’s 1:1 but we used only 750 g of sugar so you can also cut it down.
Mix the champagne with the sugar, bring it to boil and then let it on a medium heat for 20-25 minutes (depending on your stove or pot it could be ready sooner).
You can test it with little drops on a plate, you will see when it’s starting to get some consistency.
Don’t worry, the jam will also get harder after cooling down!
We noticed it formed a white foam, but it was easy to remove it with a clean spoon.
Pur it in the jars while is still very hot (be careful!). Secure the lid and turn the jar upside-down for 1 minute (helps to sterilize).
We got about 3 jars of jam, 320g each.
(Take a moment to appreciate our pretty vintage decorated old spoon!!)
Storage conditions:
Store in a cool and dry place.
Store in fridge after opening.
Tasting advice: It will go perfectly with your foie gras, fancy cheese, grilled sea bass, a plate of Serrano ham, buttery toast, smoked salmon, to bind or deglaze a sauce ...mmm (looks like someone is hungry here).
It’s not too sweet and you can still smell and taste the champagne!

Royal champagne jelly - based on a recipe from Princess Margareta of Romania
Royal Champagne jelly
This recipe is inspired by a recipe from the book with royal recipes by Princess Margareta (of Romania)
This recipe is for 4 people
10 grams keto sweetener (or sugar), 10 grams gelatin, 150 ml water, 350 ml Champagne rose (a sweet one)
I will use 4 cups and some sprinkles for decor (optional)
But if you have, I would recommend to use champagne coupe glasses
Put 100 ml water in a sauce pan. Pour the rest of 50 ml over the gelatin.
Add the keto sweetener / sugar to the water
Mix the gelatin with the water, making sure no lumps are present. Let it set for 10 minutes
Mix the keto sweetener (or sugar) with water over medium heat, for 5 minutes
Pour 350 ml of champagne in a container with a little lip, so it will be easy to pour
The rest of the champagne – you can save it for a second round of jelly, or drink it with your family, like I did ????
Mix the gelatin into the warm water (with sweetener/sugar) until the gelatin is dissolved
Mix the gelatin mixture with the 350 ml champagne
Pour the final champagne mixture into 4 cups (or champagne coupe glasses) – equal parts
You can add sprinkles as decoration – like I have here. This step is optional.
Keep in mind that some sprinkles can dissolved in the champagne, so they will not be visible in the final jelly.
Or you can add berries of your choice
I think strawberries are the best option
Put the cups in the fridge until the jelly is set
After at least 2-3 hours
Princess Margareta suggested no decoration (like I did), but before serving the jelly, to sprinkle a drop of champagne on top
