Ginger-Infused Cantaloupe With Poached Chicken: Healthier Recipe
Healthy cooking doesn't have to be boring! Try this high protein, vitamin-packed recipe at home, and impress all your dinner guests.
Ingredients
Chicken breast, sliced
Ginger, juiced
Rock Melon
1. Cut rock melon into half. Scrape out the melon seeds and place into a bowl. Add in 80ml water.
2. Juice some of the melon flesh to get 120ml of melon juice and add to the bowl.
3. Dice the remaining melon flesh into cubes. Place 5 cubes into a small vacuum pack or zip-lock bag. Spoon in a few teaspoons of ginger juice into the bag, and keep the bag air tight, sous vide.
4. Place mixture of melon seeds into a pressure cooker. Set it on high heat for 10 minutes.
5. Roll slices of chicken breast using clingwrap. Poach the rolls. Slice the poached roll into dices of chicken.
6. When the melon seeds are cooked, dish in a small bowl and combine with 80ml of water. Using a hand blender, blend the mixture to form a puree.
7. Plate.
