How To make Carrot Cake Diabetic
Ingredients

carrot, grated

dates, chopped

teaspoon
nutmeg

whole wheat flour

teaspoon
baking powder

teaspoon
baking soda
Directions:
Preheat oven to 350 F. Place the carrots, dates, raisins, water, applesauce, cinnamon, cloves and nutmeg in a saucepan, bring to boil, reduce the heat, and simmer for 5 minutes. Cool. Stir the dry ingredients together. Combine the wet and dry mixtures and stir until well blended. Spoon the batter into an 8x8 nonstick cake pan and bake for 45 to 50 minutes.
VARIATION: You may add 1/2 cup chopped nuts to the wet ingredients before combining with the dry.
Makes 1 cake.

HOW TO MAKE KETO CARROT CAKE
Carrot Cake is my second favorite cake when I need a keto dessert. First is white cake and then comes carrot cake. I created this keto carrot cake recipe with cream cheese frosting because I needed to satisfy my occasional craving for keto cake. This low carb cake recipe is moist and full of carrot & spice flavor.
This low carb carrot cake is made using REAL carrots. Don’t be afraid of carrots on the keto diet. They are loaded with fiber and vitamins. Sure, they might have carbs, but this keto carrot cake recipe on uses 1 cup of shredded carrots for the entire cake!
I topped my keto carrot cake with cream cheese frosting. This keto frosting has a little extra bite to it because I add some sour cream. You can also use plain yogurt. My favorite keto yogurt is the plain yogurt from PEAK YOGURT. Each container has 24 g of FAT and 4 g CARBS and is delicious on it’s own. Visit their site here:

KETO CARROT CAKE
(Make 1 single layer 8 inch cake or 1 double layer 4 inch cake)

1 ½ cup almond flour
½ cup granulated Swerve or sweetener of choice
¼ cup of golden Lakanto monkfruit or golden Swerve
1 ½ teaspoon baking powder
¼ teaspoon baking soda
½ teaspoon salt
1 ¼ teaspoon cinnamon
½ teaspoon nutmeg
⅛ teaspoon ground cloves
1 cup loosely packed grated carrots (from one medium sized carrot)
4 eggs
4 tablespoons butter, melted
½ teaspoon vanilla
½ cup chopped pecans
.frosting.
8 oz cream cheese, softened
5 tablespoons butter, softened
1 tablespoon sour cream or plain yogurt
½ teaspoon vanilla
½ cup confectioner’s Swerve
Grease the bottom and sides of one large circle cake pan or two 4 inch pans. Line the bottom with a circle of parchment paper.
Whisk together all the dry ingredients.
Add the carrot, eggs, butter, vanilla to the dry ingredients and mix until combined.
Stir in the pecans.
Scoop batter into prepared pans (fill halfway). Bake at 350 for 22-30 minutes. 22-25 minutes for 4 inch pans and 25-30 minutes for 8 inch. Bake until set in the middle.
Let cool completely before frosting.
For the frosting, whip together cream cheese, butter, vanilla, and sour cream. Slowly add in the confections Swerve and continue to whip for another 2-3 minutes or until fluffy.

This carrot cake with cream cheese frosting will fool any carrot cake fan and is made with low glycemic index ingredients so you can enjoy and avoid a diabetic blood sugar spike! One of the tricks is substituting some of the carrots for zucchini! I promise you that you can't tell the difference!

Low-Carb Carrot Cake Recipe
Approximately 4-5 carbs per 1/16th serving
Ingredients:
1 ½ cups fine almond flour
½ cup coconut flour
2 teaspoons baking soda
½ teaspoon baking powder
1 ½ teaspoon cinnamon
½ teaspoon ground nutmeg
¼ teaspoon ginger (or Chai Spice!)
1/4 tsp Cardamom spice
Pinch of salt
4 eggs
1 cup coconut oil (this oil is excellent for this recipe)
2 teaspoons vanilla extract
1.5 cups of Allulose or other sugar free sugar substitute
1 ½ cups well packed grated zucchini (285 grams)
1 cup loosely packed grated carrots (70 grams)
½ cup walnuts or pecans if you like them
Directions:
1. Mix the dry ingredients together and set aside.
2. Blend the wet ingredients and then blend-in the dry flour mixture into the wet ingredients, adding the nuts as well.
3. Mix until well incorporated.
4. Prepare two, 9”-inch round pans with oil or parchment paper.
5. Set Oven Temperature- 350-degrees.
6. Bake for 25 to 30 minutes or until the cake is firm and the inserted toothpick comes out clean.
7. Prepare the cream cheese frosting while the cake is baking.
Cream Cheese Frosting
Ingredients:
16 oz of Cream cheese
1/2 cup of Butter
2 .5 cups Allulose or other sugar-free, sugar substitute
2 teaspoons vanilla extract
2 tablespoons heavy cream
Directions:
1. Blend cream cheese, butter, powdered sugar substitute, vanilla, and heavy cream until light and fluffy.
2. Wait for the cakes to cool before icing them.
3. Stack and ice the cakes for a double-layer carrot cake!
4. Garnish and decorate with nuts
