RECIPE
DAY 74 – Grilled Shrimp and Cannellini Bean Salad
Serves 2
Ingredients:
½ lb (250 g) Peeled and de-Veined Shrimp
1 15oz (400 g) can Large Cannellini Beans [rinsed and drained]
1 Stalk of Celery [chopped]
1 Small Clove of Garlic [finely minced]
A Little Fresh Chopped Parsley <I used 2 Tbsp (6 g)>
1 Tbsp (15 g) of either Fresh Lemon Juice or White Wine Vinegar
1 Tbsp (15 g) Extra Virgin Olive Oil (plus a little more for drizzling the shrimp)
Salt & Pepper (to taste)
Process:
1) Preheat a grill pan or your outdoor grill to high. In a small bowl coat the shrimp with a little extra virgin olive oil and season with salt and pepper. Place on the hot grill and cook for about 3 minutes on each side or until cooked through.
2) In a large bowl combine the remaining ingredients, season everything with salt and pepper, and toss together until combined. Add in your grilled shrimp and set aside for about 10 minutes so all the flavors can get to know each other. Enjoy with some crusty Italian bread and a glass of white wine.

Four Bean Salad

Ingredients
Kosher salt and freshly ground black pepper
2 pounds green beans, trimmed
1/3 cup olive oil
2 tablespoons honey
2 tablespoons yellow mustard
2 tablespoons apple cider vinegar
2 cloves garlic, grated or minced
2 cups cooked baby lima beans, canned or frozen
One 15-ounce can kidney beans, rinsed and drained
One 15-ounce can white beans, such as cannellini or great northern beans, rinsed and drained
1/2 cup sliced almonds
1/4 cup dried cranberries
4 scallions, thinly sliced
2 tablespoons chopped fresh cilantro
Directions
Bring a pot of salted water to a boil and prepare a bowl of ice water. Add the green beans to the boiling water and cook until still very crisp, 1 to 2 minutes, then transfer to the ice water until cool. Cut in half.
Whisk together the oil, honey, mustard, vinegar and garlic in a large bowl. Season lightly with salt and pepper. Add the green beans, lima beans, kidney beans, white beans, almonds, cranberries and scallions and toss until everything is coated. Season to taste. Sprinkle with cilantro. Serve immediately or cover and refrigerate until ready to serve, up to 1 day.
