The traditional way to make kulfi involves cooking the milk until it thickens up quite a bit. Then milk solids are added to the Kulfi to make it creamier and its then flavored with cardamom, nuts, saffron.
These days people also make a quick version of Kulfi in which you don’t cook at all. It’s instant and no-cook.

Ingredients:
4 cups Milk (full fat)
1 1/2 cup Milk Powder
1 3/4 cup Condensed Milk
2 tbsp Almonds (chopped)
2 tbsp Pistachios (chopped)
1/2 tsp Cardamom Powder
1/2 tbsp Corn Starch + Water
1 cup Mango Puree
Method: Lets start with heating up the Milk, till it boil then reduce the heat to medium low and add Milk Powder stir it for few moments and then add Condensed Milk, Almonds (chopped), Pistachios (chopped). Let the milk simmer for 20 minutes on low heat till the milk thickens up. Stir the milk in regular interval. After 20 minutes add Cardamom Powder mix it properly then add Corn Starch with water and cook it for another 5 minutes. Continuously stir the milk, after 5 minutes switch off the flame and let it cool down completely. After cooling down add Mango Puree, mix it with the Milk properly and then pour it the Kulfi Mould. Now freeze it for 4 hours in the refrigerator. After 4 hours dip the Kulfi mold into room temperature water, so you can take it out easily.

Easy Mango Kulfi Pops
Summer is finally here and it's time to cool down with some icy treats including my super easy Mango Kulfi Pops :D
I love this recipe because it's super creamy and light, with the tropical flavour of Alphonso Mango and floral aroma of Cardamom.
These pops come together in 10 minutes, and are the perfect treat to cool down. Make a big batch, tuck them away inn the freezer, and enjoy all summer long :D

INGREDIENTS
14 oz, Condensed Milk
1.5 cups, Mango Pulp/Puree
½ tsp, ground Cardamom
2 cups, cold Heavy Cream
In a bowl, add Condensed Milk, Mango Pulp, and Cardamom and whisk to combine.
In a stand mixer, whisk Heavy Cream until stiff peaks just begin to form.
Add Condensed Milk/Mango mixture to Whipped Cream, and gently fold until
incorporated.
Fill Popsicle Moulds with Mixture and allow to freeze for a minimum of 6 hours before unmoulding. Enjoy! :)

चीकू कुल्फी | Chickoo Kulfi | Sanjeev Kapoor Khazana
A chilled kulfi (traditional Indian icecream) is the best solution for summers. Especially this creamy kulfi is mouth-watering because it is made using chikoos.
CHICKOO KULFI
Ingredients
1 cup chickoo puree
2 medium chickoos, peeled, deseeded and finely chopped
4 cups full fat milk
⅓ cup condensed milk
2 tbsps finely chopped cashew nus
½ tsp green cardamom powder
Method
1. Heat milk in a deep non-stick pan. Cook till it comes to a boil.
2. Cook on low heat, stirring continuously till the mixture thickens.
3. Add condensed milk and mix well.
4. Switch the heat off and stir in the chickoo puree and mix till well combined. Add cashew nuts, green cardamom powder and chopped chickoos and mix well.
5. Allow the mixture to cool slightly.
6. Pour the mixture into individual kulfi moulds, tightly cover with a lid and freeze for 6-8 hours.
