Pathetic Man's (Vegan) Cabbage Stew
Pathetic Man’s Lucskos Káposzta (cabbage stew)
Original recipe from The Hungarian Cookbook by Susan Derecskey
Recipe:
½ a head of cabbage (about ¾ a pound) Salted water
1/8 teaspoon caraway seeds
1/8 pound vegan bacon or other oily meat substitute (I tried vegan peperoni in this one) diced
1 Tablespoon flour ½ teaspoon paprika
1-2 Tablespoons vegan sour cream Pepper
Cut the washed cabbage into ¼”- ½” thick strips and plop into boiling, salted water with the caraway seeds and cook 5 minutes. Drain the cabbage, keeping 1 cup of the water. Cook the vegan bacon until oil is released or if using a fat-less meat substitute, add 2 Tablespoons of a neutral oil that will take on some of the flavors. Remove the cooked protein and if needed add some oil so there’s one tablespoon total in the pan. Add the flour and paprika and cook for 2-3 minutes. Gradually stir in the cabbage broth. Add the cabbage and bring to a simmer for 2-3 minutes. Remove from heat, add the vegan bacon back in and combine with the vegan sour cream. Season with pepper to taste.
Note: the sauce should not be creamy, and it does need to cook (simmer) another few minutes before serving.
The title is possessive singular because if you're veganizing Transylvanian cabbage recipes, you are alone.

How to make red cabbage coleslaw (recipe)
Let us show you how to make creamy red cabbage coleslaw with our simple easy recipe. It pairs perfectly with chips, BBQ food, in a sandwich, tacos, chicken, pulled pork, or ribs. Homemade coleslaw is so much better than shop brought and red cabbage makes the colour more interesting. Sadie shows how to make the perfect coleslaw, if you want to make a KFC-style coleslaw then use white cabbage instead, and add 3tbsp of lemon juice, use white wine vinegar, and add 2tbsp of grated raw onions. To make it an Asian slaw, use a little sesame oil, rice vinegar, and top with sesame seeds.
To start making your coleslaw, chop up 1/4 red cabbage into small cubes. Then grate up one large carrot using either a box grater or food processor if you have one. Combine together, then and add mayonnaise, apple cider vinegar, salt, and pepper. Give it a final mix with two spoons and then it is done! This recipe is suitable for vegetarians. To make it a vegan recipe simply make it without the mayo, or swap it for a dairy-free alternative like greek style natural soy yoghurt.
