Syns per serving - FREE
Serves 4
Low-calorie cooking spray
250g lean beef mince (5% fat or less)
1 large red onion, finely chopped
3cm piece fresh root ginger, peeled and finely grated
1 garlic clove, finely grated
1 tbsp curry powder (Watch out for spice/seasoning blends that have added ingredients (like sugar, oil or flour). To protect your weight loss, count ½ Syn per level tsp/1½ Syns per level tbsp)
2 tomatoes, finely chopped
2 large peppers (1 red, 1 yellow), deseeded and diced
Grated zest and juice of 1 lime, plus wedges to serve
100g fat-free natural Greek yogurt
For the wraps:
8 large eggs
2 tsp cumin seeds
Small pack fresh coriander, chopped
Spray a wide non-stick frying pan with low-calorie cooking spray and place over a medium-high heat. Add the lean beef and onion and stir-fry for 5 minutes or until the beef is browned, then drain off any fat if there is any.
Reduce the heat to medium, add the ginger, garlic and curry powder and stir-fry for a few minutes. Stir in the tomatoes and peppers and stir-fry for 6-8 minutes or until the tomatoes have softened and the mixture has thickened. Season to taste, cover and keep warm.
Meanwhile, whisk the eggs in a large measuring jug, stir in the cumin seeds and most of the coriander and season lightly.
Spray a non-stick frying pan (about 20cm across) with low-calorie cooking spray and place over a medium heat. Stir in around one-quarter of the egg mixture, tilting the pan to coat the base, and cook for 2-3 minutes or until it's set on the bottom. Flip over and cook for a further minute. Carefully slide the omelette onto a warm plate, cover with foil and repeat to make 4 omelettes.
Stir the lime juice and half of the zest into the yogurt.
To assemble the wraps, spoon the beef mixture down the centre of each omelette, drizzle with the lime yogurt and scatter over a little more zest and coriander. Fold the sides in to enclose the filling, then scatter over the rest of the lime zest and coriander and serve with lime wedges and salad.

This YouTube only series is kicking of with The Captain giving us a great simple recipe for a Venison Neck Pot Roast! These recipes are made for the every day family with every day kitchens in mind. Seth will providing us with do it yourself wild game recipes from his adventures in the woods and water.
Recipe:
Marinade-
-1 bottle of red wine
-10 allspice berries, crushed
-10 black peppercorns, crushed
-3 bay leaves
Bring to a boil, let cool, submerge roast and store in fridge for 12h to 4 days
Roast-
-kosher salt
-1 cup flour
-3 tablespoons paprika
-1 teaspoon cayenne
- ¼ cup lard or bacon fat
-2 yellow onions
- 2 celery stalks
-3 carrots
-2 parsnips
- 3 Yukon gold potatoes
- 1 turnip
Remove the roast from marinade(save), dry and salt well.
Mix flour, paprika, cayenne and coat roast.
Heat lard/bacon fat, in large, lidded pot and brown meat on all sides then remove from pot.
Preheat oven to 325F, slice onions and add to pot and brown well 5-10 mins.
Add 2 cups of marinade and boil, add roast and 2 cups water and simmer, then add to oven with lid on and cook for 1.5-2.5 hours depending on age of deer.
Cut celery, carrots, parsnips, potatoes and turnip into large chunks.
Add to pot after 1.5-2.5h cooking and cook for additional 1.5 hours.
Remove roast and slice, serve with the root veggies, some hearty bread and sour cream.

Syns per serving - FREE
Serves 4
low-calorie cooking spray
3 garlic cloves, crushed
2 green chillies, deseeded and chopped, plus sliced chilli to serve
227g can chopped tomatoes
2 tbsp syn-free curry powder (check labels for Synned ingredients like sugar, flour and oil)
400g lean beef steak, visible fat removed, cut into thin strips
2 large onions, cut into wedges
2 large peppers (1 red, 1 yellow),
deseeded and thickly sliced
2 tomatoes, cut into wedges
1 level tbsp cornflour (if needed - add 1/2 Syn per serving)
2 tbsp fat-free natural yogurt
Spray a large non-stick frying pan with low-calorie cooking spray and place over a high heat. Add the garlic, chillies, chopped tomatoes and curry powder and cook for 3-4 minutes or until the vegetables have softened.
Add the beef and cook for 3-4 minutes, turning regularly. Pour in 200ml boiling water, reduce the heat to medium and simmer for 10 minutes or until the beef is tender and the sauce has reduced by about one-third and thickened. Stir occasionally.
Meanwhile, spray another non-stick frying pan with low-calorie cooking spray and place over a high heat. Stir-fry the onions and peppers for a few minutes or until lightly browned. Add the tomato wedges and fry for a few minutes more, stirring often.
If you need to thicken the sauce, mix 1 tbsp of cornflour with 1 tbsp cold water to form a smooth paste, then stir it into the beef and simmer for a minute stirring constantly (add 1/2 Syn per serving) Add the onions, peppers and tomato wedges, then remove from the heat and allow to cool for a few minutes before stirring in the yogurt. Scatter over the extra chilli and serve with rice.

Beef Wellington is al jaren hét klassieke kerstrecept. Maar veel mensen zijn huiverig om eraan te beginnen omdat het nog al eens kan mislukken. Niet als je mijn recept volgt. Dan lukt dit heerlijke gerecht altijd! Ik wikkel de ossenhaas eerst in parmaham met een champignonlaagje en daarna geef ik het een jasje van bladerdeeg. 30 minuten afbakken in de oven en klaar is Kees. Je kunt deze Beef Wellington ook prima van te voren bereiden zodat je 'm voor het kerstdiner alleen nog maar een half uurtje in de oven hoeft te schuiven.
