INGREDIENTS:
1/2 cup (55g / 2oz) dutch processed cocoa
2 cups (260g / 9oz) plain (AP) flour
1/2 cup (100g / 3.5oz) dark brown sugar
1/4 cup (50g / 1.8oz) white granulated sugar
2 teaspoons baking powder
1/2 teaspoon baking (bicarb) soda
1/4 teaspoon salt
1 cup (200g / 7oz) dark chocolate chips
2 large eggs
3/4 cup (180ml) whole milk
115 g (1/2 cup / 4oz) unsalted butter, melted
1 teaspoon vanilla

This Coffee Cake recipe is SO GOOD!

Ingredients
⁃ 3 cups of self raising flour
⁃ 2.5 cups of sugar
⁃ 3/4 cup of Greek yoghurt
⁃ 4 eggs
⁃ 1/2 cup of canola oil
⁃ 2 tbsp of ground coffee
⁃ 3 tbsp of hot water
Icing Ingredients
⁃ 1/2 tbsp of ground coffee
⁃ 1 tbsp of hot water
⁃ 125g of softened unsalted butter
⁃ 3 cups of icing sugar
⁃ 1/2 cup of walnuts
Method
1. Add the flour, sugar, yoghurt, eggs and oil to a bowl and mix well
2. Mix the ground coffee with hot water and add this to the cake mixture
3. Pour the cake mix into a tin and bake in the oven at 180°C for 40-50 minutes, or until a skewer comes of clean when you poke it
4. Add the softened butter to a stand mixture and whip it
5. Slowly add the icing sugar and mix well
6. Mix the ground coffee with hot water and once it cools down, add it to the butter and sugar mixture and combine
7. Once the cake has cooled down, add the icing and walnuts
8. Enjoy!

BETH'S CAPPUCCINO MUFFIN RECIPE
Makes 12
INGREDIENTS:
2 1/3 cups (280 g) all-purpose flour
2 tsp (10 ml) baking powder
1 tsp (5 ml) salt
1 tsp (5 ml) ground cinnamon
¾ cup (180 ml) hot water
2 tbsp (30 ml) espresso powder or instant coffee
¼ cup (60 ml) milk
2 eggs
1 cup (200 g) sugar
¾ cup (180 ml) vegetable oil
1/3 cup (80 ml) mini chocolate chips
METHOD:
Preheat oven to 425F (218 g).
In a medium bowl whisk together the flour, baking powder, salt and cinnamon. Set aside.
In a small bowl combine hot water and espresso powder, stir to dissolve. Add milk, stir to combine and set aside.
In a large bowl, whisk together eggs, sugar and oil. Then slowly add the coffee mixture, stir to combine. Then add the dry ingredients in thirds, whisking gently until smooth. Add chocolate chips, stir to combine.
Place the muffin papers in a 12-cup muffin tin. Fill each cup half way.
Bake for 17-20 minutes until risen and set. Serve with your favorite cup of coffee. Enjoy! xx
