How To make Can Your Own Apple Pie Filling
4 1/2 c Sugar
1 c Cornstarch
2 ts Ground cinnamon
1/4 ts Gound nutmeg
3 tb Lemon juice
2 To 3 drops yellow food color
6 lb Tart apples
Peel/core/slice Here is a great recipe for you home canners out there.It's apple pie filling for a two crust pie. In sauce pan blend first 4 ingredients and 1 tsp salt. Stir 10 cups water cook and stir till thick and bubbly. add lemon juice and food coloring. Pack into hot sterilized quart jars leaving 1" headspace. Fill jars with syrup leaving 1/2 inch headspace. Use spatula to help distribute syrup. Adjust lids. Process in water bath for 20 min. Makes 6 quarts; each quart is enough for 1 pie. FROM: DAWN FULLER (TSAE81B) -----

Print the Recipe:
Ingredients
10 apples, peered, cored, and sliced
4 oz (114 g) unsalted butter
3/4 cup granulated sugar
1 cup packed light brown sugar
4 and 1/2 tablespoons (50g) cornstarch
1 tablespoon ground cinnamon
1/4 teaspoon salt
1/2 cup heavy whipping cream
Instructions
Melt the butter in a large skillet over medium heat. Add all of the remaining filling ingredients except for the cream. Cook the filling until it thickens. The apples should be fork tender. Remove from the heat and add the heavy cream. Mix and set aside to cool completely. The filling can be stored in the refrigerator in an airtight container for up to 2 weeks.
Notes
If the apples release too much liquid, the filling may take longer to thicken. To prevent the apples from getting mushy, combine a tablespoon of cornstarch with 2 tablespoons of warm water together in a bowl. Whisk tigether and add to the filling. This will help thicken the juices faster. If the filling gets too thick (too much cornstarch), thin it out with some more heavy cream and a splash of water or apple juice.

►8 Tbsp unsalted butter
►3 Tbsp all-purpose flour
►1/4 cup of water
►1 cup granulated sugar
►1 egg + 1 Tbsp water, for egg wash

►2 1/2 cups all-purpose flour plus more to dust, *measured correctly
►1/2 Tbsp granulated sugar
►1/2 tsp sea salt
►1/2 lb COLD unsalted butter (2 sticks) diced into 1/4 pieces
►6 Tbsp ice water (6 to 7 Tbsp)
