This hearty breakfast skillet is filled with potatoes, Italian sausage, eggs, and topped with cheddar cheese. This is a go-to meal for any family.

Hearty Breakfast Skillet Recipe (In Order of Appearance)
1 Tbsp Olive Oil
1 to 2 lb Mild Italian Sausage
1/2 Cup Olive Oil
2 Medium Potatoes
1/2 tsp Salt
1/2 tsp Black Pepper
1 tsp Garlic Powder
1 tsp Onion Powder
1/2 tsp Red Pepper Flakes
1/2 tsp Smoke Paprika (Optional)
1 Red Bell Pepper
1 Yellow Bell Pepper
1 Green Bell Pepper
1 Small Onion
4 Large Eggs
1 Cup Medium Cheddar Cheese
1 tsp Chopped Parsley (Optional Garnish)
*Pre-Heat Oven to 400°F
**Stovetop prep meal on medium to medium-high heat
*** If using an induction cooktop, set temp to at least 280°F
California Skillet
This 7 ingredient meal is super simple to put together and is a dish the whole family is sure to love!!
CALIFORNIA SKILLET
Ingredients
1 lb. ground beef (can substitute ground turkey)
3 beef bouillon cubes
1 c. rice
1-2 c. water
1 med. onion
1 bell pepper
1-2 cans of Rotel
2 tsp. minced garlic
8 oz. Monterey Jack cheese
Directions
1. In a large skillet, brown meat, onion, and bell pepper until beef is no longer pink.
2. Add rice, bouillon cubes, rotel, and water. (Just enough water to cover the mixture.)
3. Bring to a boil, cover and simmer 20-25 minutes until rice is done. (If you are using Minute Rice, this should only take about 10 minutes.)
4. While your skillet is cooking, preheat your oven to BROIL.
5. Carefully broil your skillet until it is golden brown and bubbly. Be careful! It will brown pretty quickly!

Welcome back y'all! Today I'll be showing you how I make one of my favorites breakfast dishes. I remember the very first time I had skillet potatoes, my husband made then for me years ago and it was THE BOMB! If you love potatoes, then you'll love these. Very simple and beginner friendly.
5 Russet Potatoes
1/4 Onion- sliced
Salt to taste
Pepper
onion powder (optional)
paprika
parsley
thyme
3 tbsp oil (or more as needed)
2 tbsp unsalted butter (or more as needed)
3 tbsp Water
Season to your taste, I showed how to in the video. It's very easy, no measurements needed.

DIRECTIONS
1. In a large skillet over medium heat, heat olive oil then add potatoes in single layer. Add water then cover the skillet with a tight-fitting lid. Cook until the potatoes are tender, 15-20 minutes, stirring occasionally.
2. Meanwhile, whisk together eggs and milk. When the potatoes are tender, remove the lid and push the potatoes to one side of the pan. Add the egg mixture and red onions to the skillet and let set for about 1 minute, until the edges of the eggs start to set.
3. Using a spatula, drag the eggs to create curds. When the scrambled eggs are almost set, toss them with the potatoes.
4. Add Monterey jack, cherry tomatoes, and chives then season all over with salt and pepper. Toss until the cheese has melted. Remove from heat and top with avocado and more chives. Serve immediately with warm tortillas to make tacos.

Fall Chicken Skillet

Ingredients
2 teaspoons ground cumin
1 teaspoon smoked paprika
Kosher salt and freshly ground black pepper
6 to 8 bone-in, skin-on chicken thighs
2 tablespoons olive oil, plus more for drizzling
4 cloves garlic, minced
1 red onion, quartered and separated
1 tablespoon minced fresh thyme
6 to 8 fresh sage leaves, minced
2 sprigs fresh rosemary, leaves minced
2 cups halved Brussels sprouts
2 cups cubed butternut squash
1 head cauliflower, cut into small florets
1/2 cup pomegranate seeds
Balsamic reduction, for finishing
Toasted loaf of crusty bread, for serving
Directions
Preheat the oven to 375 degrees F.
Preheat a cast-iron skillet over medium heat. Mix the cumin, paprika and salt in a small bowl. Sprinkle over all sides of the chicken. Add the olive oil to the skillet and add the chicken skin-side down. Sear until golden, 5 to 6 minutes, then flip and sear the other side, 2 to 3 minutes. Remove to a plate.
Add the garlic, onion and some thyme, sage and rosemary, holding a few of the herbs back for later. Cook for 2 to 3 minutes. Add the Brussels sprouts, butternut squash and cauliflower. Season with a pinch of salt and pepper. Toss and cook for 3 to 4 minutes.
Nestle the chicken into the vegetables and sprinkle over the remaining herbs and a drizzle of olive oil. Transfer to the oven and bake until the chicken is cooked through and the vegetables are tender, 25 to 30 minutes.
Remove from the oven and sprinkle over the pomegranate seeds. Drizzle with the balsamic reduction.
Serve alongside a toasted loaf of crunchy bread.
