Betty's Mexican Beef Tinga
Betty demonstrates how to make a Mexican Beef Tinga. This is a hearty, spicy stew that can be served in the form of tacos, burritos, nachos—or, in this case, on tostadas.
Mexican Beef Tinga
1 ½ to 2 pounds shredded cooked beef (I cooked salt-and-pepper seasoned sirloin steak in a slow cooker until very tender the day before, stored the cooked meat and container of meat juices in the refrigerator overnight, and then shredded the meat and removed the fat from the meat juices on the day of making the tinga. You will find the exact method I followed for preparing the shredded beef and beef broth if you search for Betty's Steak Tacos. You may use any type of beef you like.)
juices from cooked beef, with enough water added to make 1 ½ cups beef broth (If your beef does not produce enough juices, you may substitute a 12-ounce can of beef broth.)
2 tablespoons olive oil
1 cup chopped onion
4 cloves minced garlic
2 teaspoons ground cumin seed
2 teaspoon oregano
2 teaspoons ground (or crushed) coriander seed
14.5-ounce can fire-roasted tomatoes (You may use plain diced tomatoes, either canned or fresh.)
1 ½ tablespoons chipotle peppers in adobo sauce, chopped or pureed
1 tablespoon brown sugar
1 tablespoon lime juice
5-inch tostada shells (as many as needed)
sliced fresh or pickled jalapeno rings, as needed
thinly-sliced red onion, as needed
shredded Monterey Jack cheese, as needed (You may use another type of Mexican cheese, if you prefer.)
In a deep skillet, heat 2 tablespoons olive oil until shimmering. Add onions and garlic. Cook over low heat, stirring constantly until onions are softened. Remove from heat. Add cumin, oregano, coriander, shredded beef, reserved beef broth and water mixture, fire-roasted tomatoes, chipotle peppers in adobo sauce, brown sugar, and lime juice. Bring to a boil and cook over low heat, stirring occasionally, until thickened, about 20 minutes. When thickened, spoon tinga mixture onto tostada shell. Top with jalapeno rings, sliced red onion, and shredded Monterey Jack cheese. Serve immediately. YUM! --Betty ♥♥♥

The BEST Shrimp Tacos! This easy shrimp taco recipe is ready in under 30 minutes and is super healthy and delicious! You will love the Shrimp Taco sauce.

SHRIMP TACOS INGREDIENTS:
►1 lb medium or large shrimp
►1 garlic clove, pressed or minced
►1/2 tsp sea salt
►1/4 tsp black pepper
►1/4 tsp ground cumin
►1/4 tsp cayenne pepper
►1 Tbsp olive oil
►8-10 white corn tortillas (6” diameter)
SHRIMP TACO TOPPINGS:
►2 cups shredded, or 1/2 small purple cabbage
►1 large avocado, diced
►1/2 red onion, diced
►4 oz (1 cup) Cotija Cheese, grated
►1/4 bunch cilantro, coarsely chopped
►1 lime cut into 8 wedges
SHRIMP TACO SAUCE INGREDIENTS:
►1/3 cup sour cream
►1/3 cup mayonnaise
►1 1/2 Tbsp lime juice (from 1 medium lime)
►3/4 tsp garlic powder
►3/4 tsp Sriracha sauce, or to taste

1 tsp garlic powder
1 tsp onion powder
1 tsp oregano

7.4 oz el pato tomato hot sauce
For the salsa
6 tomatillos
2 roma tomatoes
Chile de árbol, I used 15
1/4 onion
2 garlic cloves
Handful of cilantro
Salt, I used 2 tsp
Infused oil(I only use 1/2)
3/4 cup oil
1 tbsp New Mexico chili powder
2 tsp Cajun seasoning

Now chili is a really complex recipe, there are a billion and one ways to make it and this is just ONE way, and the key to an award winning chili at home is to make it your own. That’s the key to any award winning recipe.
In this recipe we’re using
3 ½ lbs ground beef
½ onion
3 garlic cloves
4 tbs chili powder 3 Fiesta / 1 Gephart
2 tsp smoked paprika
¼ cup tomato paste
1 bell pepper
2 tsp cumin
½ tsp oregano
1 tsp cayenne pepper
1 TBS OG - add to taste at end
1 TBS WOW -add to taste at the end
3 Roma tomatoes
We’re also adding
Mirepiox
(thats ½ chopped onion, ¼ cup chopped carrots, ¼ cup chopped celery)
2 TSP Better than Bouillon or use beef broth in place of water
2 TBS masarina or flour to thicken if necessary or desired
Condiments at my house
Onions
cheese
Salsa verde to taste
Chili piquin to taste
Habanero to taste
Beans of your choice, yes i said beans haha
Now here is the biggest pro tip that the chili champs use – brown your meat over high heat before adding it to the dish. This will take your recipe to a whole other level of flavor nirvana.
