How To make Cabbage & Dumpling Soup
1/4 lb Frim tofu
4 tb Water
1 c Whole wheat flour
1/8 ts Black pepper
1/4 ts Salt
1/2 md Head cabbage
1 tb Corn oil
8 c Boiling water
1 ea Bay leaf
1 tb Soy sauce
Chopped scallions Dumplings: Blend tofu with water till smooth. Sift dry ingredients. Stir in tofu mixture. Knead for 1 minute, form into 1/2" balls & set aside. Soup: Mince core of cabbage & shred leaves finely. Heat oil in soup pot. Add cabbage & saute over medium heat til golden. Add water & bay leaf. Return to a boil, add dumplings, cover & simmer for 15 to 20 minutes. The dumplings should be floating on the top at this point. Remove bay leaf. Dilute soy sauce in a bit of the broth, add to the soup. Simmer for another 5 minutes. Serve, garnishing with scallions.

Chinese Pork & Cabbage Dumplings. A basic but delicious way to make your dumplings full with asian flavors. It takes some time to make them but totally worth it.
???? Preparation time - 3 Hours & 30 Minutes.
????EQUIPMENT:
???? Knife
???? Cutting Board
???? Big Bowl 2x
???? Rolling Pin
???? Bamboo Steamer
???? Circle Ø 10 cm
???? Spatula
???? INGREDIENTS:
???? ½ Nappa Cabbage
???? 400 g Minced Pork
???? 3 Cloves Garlic
???? 10 g Ginger
???? 1 tbsp Soy Sauce
???? 1 tsp Sesame Oil
???? 1 tbsp Salt
???? 400 g Flour
???? 215 ml Water
???? 1 tbsp Salt
???? INSTRUCTIONS:
???? Peel 5 leaves off the Napa cabbage. This you will use for the steaming. Cut ½ off the Napa cabbage and cut this. Add this in a big bowl and add salt. Squeeze the cabbage so that the liquid will be gone from the cabbage. Drain half of the liquid. Add green onion, pork, garlic, ginger, soy sauce and sesame oil. Mix this. Put to the fridge. The longer it sits in the fridge the better for the taste.
???? For the dumpling wrappers add the flour, salt and boiled water in a big bowl. Mix this with a spatula first and later with your hands. When it became thicker with structure take it out and knead it for another 5 minutes. Wrap it in cling film and let it rest for 1 hour.
???? After 1 hour cut the dough in ¼ peaces. Roll out the dough till see through thin. Cut the dough with the circle. The can let the left over dough rest and use it again.
???? Fill your dumplings wrappers. Add a little bit of water around the wrappers to easily close them. Keep on doing this till all the filling is done.
???? Put water in a pan and on the stove. Add the bamboo steamer on top of the pan. Make sure it doesn't touch the water. Steam the dumplings for 9 minutes.

Dumpling Dough:
- 1 package CIRCULAR gyoza wrappers
OR
- 1.5 cups (225g) all purpose flour
- .5 cup (75g) bread flour
- 2/3 cup (147g) water, boiling
- 1/2 teaspoon (2g) kosher salt (for dissolving in water)
- corn starch for rolling
Filling and Assembly:
- 1 lb (450g) ground pork
- 3 cabbage leaves, finely chopped
- 3 green oinons, very thinly sliced
- 3 cloves garlic, finly chopped
- 1 inch knob ginger, grated
- 1 tablespooon (14g) soy sauce
