How To make Buttermilk Pecan Fruitcake
4 1/2 c Flour
2 ts Baking powder
1 ts Baking soda
1 ts Salt
3 c Pears, dried, chopped
2 c Pecans, chopped
1 c Butter
3 c Sugar
4 Eggs
2 ts Vanilla
2 c Buttermilk
Preheat oven to 400; grease and flour 4 loaf pans. Separate eggs. Mix flour, baking powder, baking soda, and salt. Add pears and pecans; stir again. Set aside. In large bowl, cream butter and sugar. Add egg yolks, one at a time, beating well after each addition. Add vanilla and beat again. Alternately add dry ingredients and buttermilk, blending well after each addition. With clean dry beaters, beat egg whites until they stand in firm, glossy, moist peaks. Fold 1/3 egg whites into batter to lighten it, then fold in remaining whites. Fill each pan 2/3 of batter. Reduce oven heat to 350. Bake 65 minutes, until tester inserted in center of each cake comes out clean. Ten minutes before cakes are done, rotate pans back to front to cakes on each rack brown evenly. Let cakes cool five minutes on wire racks, then turn out and finish cooling right side up on wire racks. Before serving, decorate top of fruitcakes with whole nuts and mixed candied fruit peel. Moist Vanilla Buttermilk Cake
Hey everyone! I love this cake so much that it's not up there as one of my favorite cakes ever.
Don't feel weird about it having buttermilk in the cake and the glaze. I promise it won't taste like buttermilk. It's going to be so good!
This cake is easy and bakes in a 13x9 inch pan, then it's topped with a yummy glaze that soaks in making the cake super moist and tasty. This cake is one of the best cakes I've ever had and it's sure to be a family favorite. I really hope you love this one as much as I do!

This is an easy recipe if the ingredients are available readily. Rich with fruits & nuts with some nice boost to celebrate the Christmas season. You can keep this cake for about 3-4 weeks and can prepare ahead of time so you can store it while brushing with brandy to hold the moist in the cake & to make it even richer in tastier.

INGREDIENTS:
Fruits Used: (700g- 5 1/4 cups fruits)
- 100g (3/4 cups) Dates
- 100g (3/4 cups) Black Raisins
- 100g (3/4 cups) Golden Raisins
- 100g (3/4 cups) Dried Pineapple Tidbits
- 100g (3/4 cups) Dried Cranberries
- 100g (3/4 cups) Maraschino Cherries
- 100g (3/4 cups) Candied Mix Peels
*You can add or change any fruit as prefer
Nuts Used: (100g- 1 cup nuts)
- 30g (1/4cup) Cashews Chopped
- 20g (1/4cup) Pecans Chopped
- 20g (1/4cup) Almonds Chopped
- 30g (1/4cup) Walnuts Chopped
????One cup or 100g of any available nuts
*You can use any type of nuts that is available(Almond, Pecans, Walnuts, Cashews)
- Few whole Cashew for decorations
- 150ml (1/2 cup +3 tbsp) Brandy (Options; Rum or Orange Juice)
- Juice of an Orange
- Zest of an Orange
- Zest of a Lemon
- 225g (2 cups minus 1/8 cup) All purpose Flour
- 60g (2/3cup) Ground Almonds (Almond Flour/Meal)
- 200g (1 3/4 cup)Butter, room temperature soften
- 200g (1cup)Light brown sugar (Dark brown sugar will give a darker color to the cake
- 3 Large Eggs
- 1 Tsp Baking Powder
- 1/2 Tsp Cinnamon Powder
- 1/2 Tsp All Spice
- 1/4 Tsp Nutmeg
TIPS:
????????In this video I am soaking fruits for 7 days. It is better to soak them for about 2 weeks. More you soak more flavor you get. If you are making this cake in a hurry you can soak them for 24hours least.
????????You can make this cake ahead of time and store it in a cool dry place, in an air tight container. Soak the cake with brandy or rum every 4-5 days.
????9 Inch round pan..

????Bake in 300F degrees for one hour fifty minutes to 2 hours. Until a skewer inserted comes out clean.

I've been making this same recipe for a very LONG time, and everyone loves it. A traditional Christmas cake, to be enjoyed with a cup of coffee or tea, it's perfect for the holiday season. I take you through the whole process from the very beginning to serving this lovely cake.

Light Orange Almond And Pecan Christmas Fruit Cake

3 cups candied fruit
2 cups flour
2 cups raisins
3 eggs
1-1/2 cups sliced almonds
1/2 cup unsalted butter ( or salted butter )
1 cup sugar
1/2 cup orange juice
2 teaspoons baking powder
1/2 teaspoon salt
zest of 1 orange
1 teaspoon almond extract
1 cup pecans
Bake 2-1/2 hours at 250 degrees F.
Recipe Note: - If using SALTED butter, simply omit the salt in the above recipe.

FESTIVE HOLIDAY FRUIT CAKE
1 1/2 cups (12 oz.) Sunripe Fruit Cake Mix
1 1/2 cups (12 oz.) Candied Pineapple Wedges
8 oz. Candied Red Cherries
8 oz. Candied Green Cherries
1 cup dried apples, coarsely chopped
1 cup pitted dates, coarsely chopped
1 1/2 - 2 cups dark raisins or currants
1 cup pecans, coarsely chopped
1 cup walnuts, coarsely chopped
1 3/4 cups all-purpose flour
3/4 cups granulated sugar
3/4 cups packed light brown sugar
1/2 cup butter, softened
5 eggs
2 tablespoons dark molasses
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/2 cup bourbon or rum
1. In a large bowl add all dried fruits & nuts. Pour bourbon or rum over fruit and nuts. Toss. Let stand 2 to 3 hours, stirring occasionally.
2. Measure remaining ingredients into large mixing bowl. beat at medium speed until blended; beat at high speed 3 minutes, scraping bowl occasionally.
3. Stir fruit mixture into batter.
4. Spread fruitcake batter evenly in a very well greased and floured 12-cup fluted or angel cake pan, or 2 loaf pans. Press mixture firmly into pan(s).
5. Bake in a pre-heated 250 F. degree oven until toothpick inserted in center of cake comes out clean, 3 to 3 1/2 hours.
6. Cool in pan on wire rack 20 minutes; invert onto wire rack and cool completely.
TIPS: Garish with whole cherries, pineapples and nuts. Store in an airtight container or wrap well plastic wrap and the tin foil.
