Here's the recipe. It makes 16 pints or 8 Quarts. Remember that by the time you put the stew in the jars, the potatoes are not yet cooked. If you plan to have some that hasn't been canned, you'll need to cook it for another 30-60 minutes until the potatoes are done.
Carter's Real Brunswick Stew:
4lbs cooked, pulled pork
2lbs cooked, shredded chicken breast (canned is fine)
1 1/2 medium onions, diced
4-5 large cloves garlic, diced
2 jalapenos, diced (seeded or not)
2 medium russet potatoes, peeled, diced, blanched for 3 min and rinsed.
16oz corn, frozen or fresh
1 1/2 pints BBQ sauce
2 quarts chicken stock
28oz can crushed tomatoes
14 oz can diced tomatoes
1T liquid smoke
1/2cup Worcestershire Sauce
8oz tomato paste
1/2 tsp black pepper
2 tsp salt
2 tsp smoked paprika
Saute onions, garlic and jalapenos in a light oil while the potatoes are blanching. Then add all of the ingredients to the stock pot. Bring to boil, reduce to simmer for about 10 min.
Ladle stew into jars, leaving 1 head space. Pressure can pints for 75 min or quarts for 90 minutes at the appropriate pressure for your altitude.

Jack found a great Brunswick Stew Recipe so we thought we would fire it up to celebrate the Big Game... and this stew is great to feed a crowd at your Souper Bowl party.

Ingredients:
1 Tbsp oil
1 med onion, diced
1 can green lima beans, drained
2 cans diced tomatoes
1 can diced green chilis
1 can kernel corn, drained
1 can creamed corn
1 can chicken breast
1 lb. BBQ pulled pork
3 med potatoes, diced
1 32 oz box chicken stock
1/4 cup ketchup
dash Worcestershire Sauce
salt & pepper to taste
Directions:
Sauté onion in oil until tender. Add remaining ingredients. Cook in slow cooker for 4 hours or cook in Instant Pot for 7-10 minutes under pressure.
Cornbread:
1 box Jiffy cornbread mix
1 box Jiffy yellow cake mix
ingredients needed for both boxes of mix.
Directions:
Preheat oven to 400 degrees.
Combine ingredients and pour into muffin tins and bake until done.
Mini muffins 12-15 minutes
Regular size muffins 15-18 minutes

Mrs. Joan's BRUNSWICK STEW
1 c. chopped cooked pork (Some people also put cooked beef, I usually don't)
1 c. chopped cooked chicken
2 c. chicken broth
½ c. chopped onion
1 ½ c BBQ Sauce
1 c. corn (Pulsed quickly in food processor if whole kernel corn,
if cream corn, pulse not needed.)
1 jar Salsa
1 can tomato soup (or crushed tomatoes)
1 t. Worcestershire sauce
1 T. Hot Sauce or more to taste
1/4 t. mustard
½ t. lemon juice
Cook all together and simmer on low.
