Ingredients 1 cup brown rice 10 tablespoons apple juice concentrate, frozen 1 1/2 cups evaporated skim milk 2 large eggs 1/2 teaspoon cinnamon 1/2 cup raisins, optional 1 tablespoon almonds, slivered, toasted, optional, or more 1 teaspoon vanilla extract, optional
Directions: Cook rice as usual, but replace 6 tablespoons of water with 6 tablespoons of the apple juice concentrate. Beat the remaining ingredients (execpt nuts together in pot. Mix in rice and cook 8-10 minutes until thick, stirring almost constantly. Spoon into dishes and chill. Sprinkle with nuts, if desired. If you like it sweeter drizzle with some maple syrup or sprinkle with a teaspoon of brown sugar.
