Chicken Cheese Broccoli Mushroom Casserole
In Microwave, cook on high for 6 minutes, 3 boneless chicken breasts, cut up, coated with Montreal Chicken seasoning..set aside….
Cut 1 ½ cups broccoli into florets, 1 cup of mushrooms and ½ onion cut up in small pieces 6 cloves garlic chopped …..set aside
In pot on stove, put 1 cup of brown rice in 2 cups of water, along with a large chicken bouillon cube..…boil, turn down ,cover, cook until water is absorbed…about 20 minutes….
In bowl, mix 1 can Campbell’s Cream of Mushroom Soup, 1 cup of ricotta cheese, 2 cups of chopped various cheeses, ¼ cup half and half…. Add the cooked chicken mixture to this…..set aside..
Turn oven onto 350 degrees…..
In casserole dish, place cooked rice on bottom, then broccoli/mushrooms/ onions…..pack down….add chicken in creamy cheese sauce mixture on top…….
Bake for 40-45 minutes until bubbly…….23 carbs in Cream of Mushroom soup……130 carbs in rice…..cheeses, veggies , chicken ….about 15 carbs…..165 total carbs in casserole….. want less carbs, eliminate the rice…….8 servings.....20 carbs each serving....

Cheesy Broccoli Casserole
Cheesy Broccoli Casserole
8 cups broccoli, cooked
10.5 ounces cheddar cheese soup
1 cup mayonnaise
3 cups (12 ounces) Velveeta Shreds, divided
2 eggs, beaten
1/2 cup onion, diced
1 teaspoon salt
1 teaspoon pepper
About 45 Ritz Crackers
4 Tablespoons melted butter
Preheat your oven to 400°.
Cook your broccoli, allow it to drain well, and cool completely. Place it in a greased 9” x 13” baking dish. Set aside.
In a large bowl, stir together the cheddar cheese soup, mayonnaise, two cups of Velveeta Shreds, eggs,  onion, salt, and pepper. Spread this evenly over your broccoli. Top with one cup of Velveeta Shreds.
Crush the Ritz crackers and stir in the melted butter. Spread crackers evenly over the top of your broccoli casserole.
Bake for 30 minutes or until the casserole is bubbly and the crackers are lightly browned. Let cool for 10 minutes before serving.

INGREDIENTS
2 Tbsp (30 ml) cooking oil
1 cup long-grain rice (rinsed)
1/2 small onion (diced)
1 celery stick (diced)
1 to 2 cloves fresh garlic (minced)
2 cups (473 ml) water
1 Tbsp (10 to 14 g) chicken bouillon powder
10 oz (283 g ) frozen chopped broccoli (thawed)
4 oz (113.5 g) American processed cheese
4 to 6 oz (113 to 170 g) sharp cheddar cheese
1/4 to 1/2 tsp black pepper
* buttered 2.7 Quart baking dish or 8 x 12
**CREAM SAUCE**
2 Tbsp (30 ml) cooking oil
8 oz mushrooms (diced)
2 Tbsp (28 g) unsalted butter
3 Tbsp ( 27 to 30 g) all-purpose flour
1 Tbsp (10 to 14 g) chicken bouillon powder
1 1/2 cups (375 ml) water
1 cup (236.5 ml) heavy cream

Broccoli Cheese Casserole
Ingredients
1 (10.75 ounce) can condensed cream of mushroom soup
1 cup mayonnaise
1 egg, beaten
¼ cup onions, chopped
20 ounces packages frozen chopped broccoli
8 ounces shredded sharp Cheddar cheese or Colby Jack
salt and pepper to taste
1 sleeve butter crackers
2 tablespoons butter or margarine
Directions
Step 1
Preheat oven to 350 degrees F (175 degrees C). Butter an 8x8 inch baking dish.
Step 2
In a medium mixing bowl, whisk together condensed soup, mayonnaise, egg and onions.
Step 3
Place frozen broccoli into a very large mixing bowl. Break up the frozen broccoli. Using a rubber spatula, scrape soup-mayonnaise mixture on top of broccoli, and mix well. Sprinkle on cheese, Season with salt, pepper and mix well. Spread mixture into prepared baking dish, and smooth top of casserole. Top with cracker mixture.
Step 4
Bake for 45 minutes to 1 hour, uncovered
