6 Week Bran Muffin Mix
This is a great recipe mom got from a friend for a 6 Week Bran Muffin Mix. You can literally put this mix in your refrigerator and just use it as you want for however many muffins you want at a time for up to 6 weeks. You can also change up the things you want in them like dried fruit, chocolate chips, whatever you like. So give it a try and let me know what you think about this version and y'all enjoy.

Ingredients:
4 cups of coconut Chia Granola Cereal or raisin bran
2 cups buttermilk
2 1/2 cups flour
1/2 up oil
2 1/2 teaspoons baking soda
1 1/4 cup sugar or 1 1/2 cups Splenda
1 teaspoon salt
2 large eggs or 3 if they are small
Mix together all ingredients and refrigerate for 6 hours.
Bake in muffin cups - lined if you like.
Bake 20-25 minutes in a 375°F preheated oven, 15 minutes if your batter is at room temp.
Batter will keep 6-8 weeks in refrigerator, or you can bake all at once.
You can also freeze the baked muffins.

INGREDIENTS
1 ⅔ cups (250 g) all-purpose flour
¾ cup (75 g) oat bran
¾ cup (50 g) wheat bran
1 Tbsp (9 g) baking powder
1 tsp (5 g) baking soda
½ tsp (1.5 g) ground cinnamon
¼ tsp (0.75 g) ground nutmeg
1 cup (250 mL) applesauce
½ cup (125 mL) maple syrup
¼ cup (60 mL) vegetable oil
2 large eggs
1 cup (150 g) raisins
DIRECTIONS
1. Preheat the oven to 375 ºF (190 ºC). Line mini muffin tins with paper liners.
2. In a large mixing bowl, stir together the flour, oat bran, wheat bran, baking powder, baking soda, cinnamon and nutmeg.
3. In a separate bowl, whisk together the applesauce, maple syrup, oil and eggs. Add this to the flour mixture and stir until evenly blended. Stir in the raisins. Scoop or spoon the batter into the prepared mini muffin tins and bake for about 12-14 minutes, until a tester inserted in the centre comes out clean. Cool the muffins in the tin for 10 minutes, then turn them out to cool completely.

In this episode, I make some of the most delicious raisin bran muffins that you have ever eaten. This recipe was made from a recipe card handwritten by my grandmother, probably copied off of a Kellogg's Raisin Bran box sold in 1979.

MOIST Bran Muffins w/Raisins. THE BEST!!
I’ve tried to perfect muffins MANY TIMES to make them moist and not dry. Especially the next day, different recipes seem to dry out overnight. However! :-) These ones are a sure winner. I like that they don’t have white sugar in them also. I used raisin bran cereal this time, but you can use any brand cereal you like. Please follow along as I explain a little tips and tricks along the way. One of them is using cupcake papers and the difference between using theirs and not using those. Thank you so much, I really hope you will make these wonderful and very very delicious muffins!
