3 Cup(s) Eggplant, chopped
3 Cup(s) Tomato canned low
Sodium 1/2 Teaspoon(s) Basil
1/2 Teaspoon(s) Oregano
Vegetable Stock Onion, chopped Cook pasta al dente. Heat garlic, onion, and pepper in broth. Simmer 5 minutes. Add eggplant and simmer until soft. Add tomatoes, and spices. Simmer 20 minutes. Toss with pasta. BAKED EGGPLANT PASTA
INGREDIENTS
For the sauce:
(2) 28 ounce canned plum tomatoes - blender pulsed or hand crushed
3 ounces tomato paste
3 cloves garlic minced
1 medium onion diced
salt to taste
1/2 teaspoon black pepper
1/4 cup olive oil
For the baked pasta:
1 pound ziti (tortiglioni, rigatoni, penne, etc)
2 medium eggplants - cubed
1/2 cup olive oil - for eggplant
2 teaspoons kosher salt
1 teaspoon black pepper
1/4 cup basil leaves - hand torn
1 pound block whole milk mozzarella - 2/3 cubed, 1/3 grated
1 pound ricotta
1/2 cup Pecorino Romano - grated (plus more for serving)

Italian MaMa's Famous Eggplant Parmesan Recipe:
9x12 Pan
1-2 Eggplants (depending on size)
Flour
Egg
Seasoned Bread Crumbs
Vegetable oil (for frying)
Parmesan Cheese
Mozzarella Cheese
Tomato Sauce
Directions: Peel and slice eggplant into ¼” circles. Coat in flour, shaking off excess. Dredge in egg, then coat both sides with breadcrumbs. Heat oil, brown eggplant on both sides. Remove and place in colander before transferring to a paper towel.
Layering Pan: Coat bottom with sauce, then add layer of eggplant, followed by sauce, parmesan cheese, mozzarella cheese. Repeat eggplant – sauce – parmesan –mozzarella for 3 layers (more if desired). Cover with foil. Place in oven and cook covered for 30-min on 350. After 30-min, remove foil and cook until cheese is browned and sauce is bubbling (approx. 45-min to 1-hr, depending on temperature of tray prior to cooking). If you prepare in advance, Italian MaMa recommends leaving tray out to get room temp prior to cooking. Enjoy!
