Kentucky Bourbon Fudge Recipe
This pecan bourbon fudge recipe is the perfect blend of sweet fudgy goodness and rich, oh so soothing, Kentucky bourbon. Perfect for your bourbon loving sweet tooth!
Ingredients
4 cups sugar
4 tablespoons cocoa
2 cups whole milk
1⁄4 cup good Bourbon
48 pecan halves
Instructions
1. In a heavy saucepan, mix sugar and cocoa until blended.
2. Add milk and mix well.
3. Add heat and slowly bring mixture to a boil. Allow mixture to boil up and dissolve sugar crystals on the sides of the pan.
4. Boil until candy reaches the soft ball stage (230-240 degrees), stirring constantly.
5. To test for soft ball stage drop a little of the candy mixture in clean, ice cold water. If you can roll it around with your finger and it holds together, it's ready.
6. Remove from heat, and stir in bourbon.
7. Beat mixture with a spoon, stirring briskly until the candy starts to crust around the sides of the saucepan and the mixture thickens considerably.
8. Pour into a buttered 9x13 glass or silicone dish.
9. Allow to cool slightly then press pecans into the fudge in rows. 10. Cut into pieces with one pecan on each piece.
11. Now try not to eat the whole batch in one sitting!

Chocolate rum balls make the sweetest gift for Christmas (RECIPE BELOW). These more-ish rum balls are fun and oh-so-easy to make, so get rolling!

CHOCOLATE RUM BALL TRUFFLES
Makes about 40 Prep 30 mins (+ 1½ hours setting time) Cooking 5 mins
250g pkt Arnott’s Choc Ripple biscuits
1 cup (80g) desiccated coconut
¼ cup (60ml) dark rum or Malibu coconut rum
¼ cup (60ml) condensed milk
2 tbs cocoa powder
150g dark chocolate melts
150g white chocolate melts
150g milk chocolate melts
Cocoa powder, to decorate
1. Line a baking tray with baking paper. To make the truffle mixture, place the biscuits in a food processor and process until finely crushed. Transfer the biscuit crumbs to a large bowl. Add the coconut, rum, condensed milk and cocoa powder to the biscuit crumbs and stir until well combined to get a fudge-like texture. Alternatively, to make truffles without adding alcohol, replace the dark rum or Malibu coconut rum with ¼ cup (60ml) thickened cream.
2. For even-sized truffles, roll heaped teaspoonfuls of biscuit mixture into balls and place on the lined tray. For a chewy texture, place in the fridge for 1 hour or until truffles are firm. Place the dark chocolate melts in a medium heatproof bowl over a saucepan of simmering water, making sure the bottom of the bowl doesn’t touch the water. Stir with a metal spoon until chocolate melts evenly and is smooth. Repeat with white and milk chocolate melts in separate heatproof bowls.
3. To evenly coat the truffles, use a fork to dip 1 truffle in melted dark chocolate. Tap on the edge of the bowl to remove excess. Place on the prepared tray. Repeat with remaining truffles, alternating between dark, white and milk chocolate. Allow to set for 30 mins. Place remaining chocolate in separate sealable plastic bags. Cut off 1 corner. Drizzle the dark truffles with white chocolate and the white truffles with dark chocolate. Dust milk chocolate truffles with cocoa powder.

Nutella Bourbon Chocolate Truffles
I have pronounced Nutella a couple of different ways in this video according to the following link:
both are correct. (Nut - ella and Newt-ella)
I have little patience with comments about how I pronounce my words, just an advance warning (but then people that make comments like that are unlikely to take the time to read the description box, lol! )
12 oz (about 2 cups chopped or chipped) chocolate
1/2 cup whipping cream
2 cups sweetened chestnut spread (Nutella)
1/4 cup bourbon whiskey
1/2 cup unsweetened cocoa (to dip or dust finished truffles in, optional)
Another 12 oz chopped chocolate (or chocolate chips) for melting to dip truffles in.
Place chocolate in medium bowl.
Heat whipping cream to simmering and pour over chocolate in bowl. Let sit for two minutes and then stir until smooth.
Add in Nutella and bourbon and stir until blended.
Cover and chill for 4 hours or until firm.
Line cookie sheets with cooking parchment or waxed paper. Make small ball shapes using about a tsp of the chilled chocolate/nutella mixture and place on cookie sheet. Freeze the balls until firm about an hour.
Melt second amount of chocolate in in medium bowl in the microwave.
Using hands (or spoon as discussed in video) drop frozen truffles in melted chocolate and roll with hands until completely coated. Roll in cocoa if desired or decorate with sprinkles while coating is still wet..
Place on cookie sheet to harden at room temperature or place in refrigerator.
Store in the fridge or freezer.
Note** you many need more chocolate to coat 60 of them, I had to melt about another cup of chips to have enough.
