Indulge in the unique flavors of Botvinya, a special cold soup featuring healthy ingredients like young beets, beet tops, sorrel, spinach, nettle leaves, dill, parsley, and fresh cucumbers. The rich base includes beet broth, fish or meat broth, white and bread kvass, horseradish, and mustard. For 8 servings, gather 500g fish, 2 boiled beets, 2 cucumbers, 150g beet tops, 8-9 beet top petioles, 125g sorrel, 125g spinach, 150g nettle, 30g green onion, 30g parsley, 30g dill, 1 tsp salt, 2 bay leaves. For the base: 250ml beetroot broth, 250ml fish broth, 250ml white kvass, 500ml bread kvass, 0.5 tsp salt, 1 tbsp sugar, 1/2 tsp mustard, 1 tsp horseradish, 1/2 tsp ground pepper, juice of 1/2 lemon. Serve with ice for a refreshing experience. Try this legendary dish at least once!
