There is something about fudge that fascinates yet strikes fear into the heart of the home cook. And I will admit, there’s a lot of physical chemistry involved in making old fashioned fudge. The recipe calls for combining and boiling milk, bitter chocolate, and sugar together until the temperature reaches 237°F/114°C (known as the “soft-ball stage”), pouring the seething mixture into a bowl, cooling it to 110°F/43°C, and then beating the candy until the surface shine disappears.
These two fudge recipes are completely different because there is no cooking, cooling, or beating required.

Take as many as you can… It has the goodness of wheat flour with that aromatic whiff of green cardamom. It’s simply wonderful.
ATTE KI NANKHATAI
Ingredients
1¼ cups whole wheat flour (atta)
¾ cup melted ghee
1 cup powdered sugar
¼ cup gram flour (besan)
¼ cup semolina
½ tsp green cardamom powder
Slivered pistachios to sprinkle
Slivered almonds to sprinkle
Tea for serving
Method
1. Preheat the oven at 180°C.
2. Take melted ghee in a bowl. Add powdered sugar and mix till sugar dissolves.
3. Add whole wheat flour, gram flour, semolina, green cardamom powder, baking powder and mix well to form soft dough.
4. Divide the mixture into equal portions and flatten slightly. Arrange on a baking tray.
5. Sprinkle almonds and pistachio slices on top and press slightly. Bake in preheated oven for 10-15 minutes.
6. Allow to cool.
7. Store in air tight container or serve with tea.

Ingredients
1 stick butter
1-1/2 Cup sugar
1/4 Cup powdered Cocoa
1/2 Cup milk.
1 tsp Vanilla
1/2 Jar Peanut butter
3 Cups quick cook oatmeal.
Instructions
Boil for more than one minute. How much more? I boiled them 2 minutes.Don't go away from the stove because this burns quickly.Stir, and stir.After the 2 minutes add vanilla, peanut butter (the nuttier the better).Stir until peanut butter is blended into the cocoa mixture.Add3 cups quick cook oatmeal.By using 2 teaspoons, drop onto waxed paper. Will harden fast. Makes about 60 cookies.

In this video, I show you how to make a keto chocolate chip cookie for one using three ways - the microwave, air fryer and oven. Of course, the microwave is the fastest. You can make a keto cookie in 45 seconds using the microwave. But the air fryer and oven are just as easy and take around 6 minutes to bake up a soft, chewy low carb chocolate chip cookie.
Another amazing thing about this recipe is that it is EGG FREE!!! So not only is this cookie gluten free and sugar free, but if you are trying to avoid eggs, this is your keto recipe! Plus we don’t have to worry about getting an eggy taste or splitting up a ¼ of an egg like some of the single serve chocolate chip cookie recipes do.

KETO CHOCOLATE CHIP COOKIE FOR ONE RECIPE
2 tablespoons almond flour
1 teaspoon coconut flour
2 teaspoons monk fruit
1 tablespoon unsalted butter, softened
1/4 teaspoon vanilla
pinch of salt
1 tablespoon keto approved chocolate chips
In a small bowl, add all the ingredients listed above. Mix together using a fork until combined. Mold into 1 or 2 cookies. Place in the refrigerator for 5-10 minutes to allow the flavors to meld together and to keep the cookie from spreading while baking.
OVEN INSTRUCTIONS: Place cookie on a parchment lined baking tray and bake at a 350 degrees for 6 minutes or until the edges start to brown. Remove from the oven and let cool completely before handling.
MICROWAVE INSTRUCTIONS: Place cookie on a piece of parchment paper and microwave at 100% or high for 45 seconds. Let cookie cool completely before handling.
AIR FRYER INSTRUCTIONS: Place cookie on the pre-greased air fryer grilling tray. Bake at 350-360 degrees for 6 minutes. Let cookie cool completely before handling.
